Why is breakfast important?
We all know the saying, “Breakfast is the most important meal of the day!” But why do we say that?
While we sleep our bodies are fasting, and when we eat within 2 hours of waking up we are starting up our brains and bodies to prepare for the day ahead of us. Eating breakfast gives us the energy and nutrients we need for the day, not to mention the fact it can help with weight loss by reducing the desiring for excessive snacking before lunch!
However, the most important part of breakfast is not just eating it, but what you eat! Within these recipes you can find healthy, hearty foods as well as Saturday morning we made it through the week celebratory meals!
Berry Protein Pancake Bites
Ingredients
- 1 cup Krusteaz Buttermilk Protein Pancake Mix
- 2/3 cup milk
- 1 egg
- 1 cup fresh berries rinsed and diced
- powdered sugar jam and/ or syrup, for topping/dipping
Instructions
- Heat oven to 350°F. Lightly grease mini muffin pan.
- In a medium bowl, whisk together pancake mix, milk, and egg. Batter will be slightly lumpy. Spoon 1 heaping tablespoon into each well in mini muffin pan.
- Top pancake batter with 3-4 berries, adding a variety to each.
- Cook pancake bites for 12-14 minutes, until lightly browned. Cool in pan for 5 minutes. Remove and sprinkle with powdered sugar. Dip bites in warm jam or syrup.

Healthy Zucchini Carrot Muffins
I found this muffin recipe, made a couple of changes and it’s a winner! I love that it uses honey instead of sugar and that it has an entire cup of both shredded carrots and zucchini. I’m all for sneaking more vegetables into my kids’ diets! I also like that it made 2 dozen muffins, instead of just one. 12 muffins would last us all of about a half hour. Even still, we ate them all in 3 days. I won’t tell you how many I ate!

Under 200 Calorie Double Fudge Muffins
I’m always on the lookout for simple breakfast and snack recipes that are healthy and appealing for kids. OK, I want them to appeal to me as well, but sometimes my kids are easier to please than I am! These muffins certainly fit the bill. They have chocolate, so my kids are sold. The fact that they have whole wheat flour, lower amounts of sugar and 3 bananas makes them a winner in my book. The original recipe I used was for “100 calorie” muffins. I put my spin on them and the result was more around the 200 calorie mark. Still not too bad! Plus you don’t have to eat 3 to feel satisfied.

Homemade English Muffins
Several months ago a reader sent me an email with a recipe for homemade English Muffins. I read it over and added it to the “To Do” pile. Well, I finally got around to making them in October and since then, my only thought was, why didn’t I start making these sooner?! Not only are they delicious, but they’re easy to make and the recipe makes enough to last us a few months. Coupons for English muffins are rare, so instead of paying full price, I just find myself going without. It’s so nice to be able to make them at home to enjoy when I please!
These are fantastic alone, but we also love them made into mini pizzas, egg sandwiches and even topped with tomato and cheese and put in the oven on broil.

I don’t as frequently as I use to when I had two boys living at home, but sometimes we enjoy cooking a bigger breakfast and this Breakfast Hash with Chorizo & Eggs hits the spot! It’s a Mexican chorizo that comes in a tube rather than individual links. I thought a “hash” with the chorizo and potatoes cooked in my cast iron skillet sounded like a good idea.
I cut up the potatoes into chunks along with an onion and orange bell pepper. Cooked it up in a little oil in the skillet. While that was cooking, I cooked the chorizo in a different pan (wasn’t sure how it would cook up), then added it to the potatoes. When I was ready to serve breakfast, I fried up a couple eggs to put on top. Garnished with a little shredded cheddar, green onion and cilantro and declared it breakfast!

This is my go-to fluffy pancake recipe, altered for the cocoa addition. Now before you go running for a gallon of milk, know that these pancakes are really not overly sweet like you’d think! I did add honey to counteract the bitter taste of the cocoa. What adds the over-the-top sweetness are the pancake toppings! Now, when I took these photos, it was my chocolate lover’s birthday. So I was a bit more lenient than I normally would have been, had it been an average school day. Birthdays call for special toppings, like Raspberry Kodiak syrup and whipped cream! On normal days, why, you could top these with a drizzle of syrup and fresh fruit and they’d be amazing. I mean, c’mon, they’re chocolate pancakes.

Citrus Crescent Blossom
I had several rolls of crescent dough in my fridge that were begging for a recipe to use them in. I wanted to make something a little different that was still easy and had a nice, sweet, Spring flavor. I ended up coating the uncooked crescent dough in a mixture of sugar and citrus zest, then arranged the pieces in a pie pan to resemble a spring blossom. It worked beautifully- and tasted delightful! It’s sweet enough to be a dessert, but I also enjoy it with breakfast or brunch.

I’ve had the Italian-style (tomatoes, basil, mozzarella) version of bruschetta many times, but had never seen anything like this one until I came across this recipe in my Taste of Home Holidays and Celebrations 2011 cookbook. I made a few tweaks to the recipe and was amazed at how delicious this is! Bruschetta is typically an appetizer but I think this berry almond version could also work as a breakfast dish or even a dessert too!

Lemon Crepes with Strawberry Syrup
We love crepes at our house and when I found this fantastic recipe for fresh strawberry syrup, I knew I wanted to pair them with lemon crepes. It was delicious combination and everyone loved it. It was easy enough to make as far as crepes go, but they looked so pretty, you could easily serve them to guests.
I’ve made this syrup several times and while it tastes amazing, mine never thickened up like the original recipe stated until it was very cool. So make the syrup first, and then transfer to another container and let cool while you make the crepes. (I’ve even stuck mine in the fridge and that worked well! It was about room temp when I served it- and perfectly thickened!)

I absolutely love fall…for lots of reasons, but mostly because it’s the best time for baking…and all things pumpkin! I’ve been wanting to try this recipe for a long time, and it did not disappoint. Making cinnamon rolls does take some time, but I have found a few tricks over the years to make the process a little bit easier. I always used to dread the mess that came from putting flour all over the counter to roll out the dough, but for the last couple of years I have just sprayed PAM Cooking Spray directly on the counter and it works fabulously for keeping the dough from sticking to the counter and it is so much easier to clean up than flour! The smell of these while baking makes every minute worth it- I promise!

I have to say, these are one of my favorite muffins ever. They were so simple to make and I love the texture. And the flavor! My whole family agreed these muffins were amazing. The cheesecake filling isn’t overwhelming- instead it adds a lovely moist, richness that makes you want to…well, grab another muffin!
Here’s a tip about making muffins- don’t use a mixer of any sort. Just stir the ingredients up by and and don’t worry if every little morsel is well mixed in. The muffins rise higher when baked when you mix them by hand! Add the delicious crumb topping I shared and you’ll love the bakery-look of these homemade muffins.

I recently came across this recipe for Doughnut Muffins and thought I’d give it a try. The results are delicious – I’m not sure that they taste exactly like a doughnut but pretty close and no frying is involved. You do dip the muffins in butter which is a pretty good substitute for deep frying in oil!

These muffins had a nice, light flavor and didn’t stick at all to the muffin liners, which was an added bonus!

Under 200 Calorie Double Fudge Muffins
I’m always on the lookout for simple breakfast and snack recipes that are healthy and appealing for kids. OK, I want them to appeal to me as well, but sometimes my kids are easier to please than I am! These muffins certainly fit the bill. They have chocolate, so my kids are sold. The fact that they have whole wheat flour, lower amounts of sugar and 3 bananas makes them a winner in my book. The original recipe I used was for “100 calorie” muffins. I put my spin on them and the result was more around the 200 calorie mark. Still not too bad! Plus you don’t have to eat 3 to feel satisfied.

Peanut Butter & Jelly Muffins
Every year in the Fall I can’t believe it’s almost time for school to start again – where does the time go? I like to stop by my local Kroger store and stock up on all of the foods that my kids love in their lunches. Packing lunches for four kids every day is a bit of a challenge, and I love that I can always find everything I need at my local Kroger store. My kids love peanut butter and jelly so I’m always looking for ways to spice it up just a little. I made this muffins and they were a huge success with my kids (and my husband too)! These would be great to pack in school lunches or even to serve as an after school snack with a big glass of milk.

Banana Nut Muffins
So I went a little crazy last week at the produce market and bought 6 bunches of bananas. They were .25 each! I couldn’t pass up a deal like that! So naturally I’ve been making banana… everything. I’ve been fine tuning this recipe for a while now and I love this end result. It’s a light, flavorful and perfectly moist muffin with a beautiful muffin top. Rejoice in the muffin top, people! Amazing Blueberry Muffins
Our family loves blueberry muffins and for a while now, I’ve been on the hunt for a really great recipe. I’ve tried the highest rated recipes on all sorts of different websites and they turned out okay…but not fantastic, you know? I’m not one to settle for mediocre recipes, so I keep searching!
The first time I flipped through the I Do Cookbook, I saw the Blueberry Muffin recipe, read through it and thought, “Hmmm, that’s different, I’ll have to try that one!” So I did. Numerous times. As a matter of fact, I’ve made them every few weeks for the past several months- we love them. There’s nothing particularly ground breaking about how they turn out- it’s just a very consistent recipe that produces a light, fluffy and very tasty muffin. I’ve tried tweaking a thing or two a couple times and nope, the original recipe is perfect- no changes needed, which is not common for me to say! So here it is, enjoy!

Healthy Zucchini Carrot Muffins
I found this muffin recipe, made a couple of changes and it’s a winner! I love that it uses honey instead of sugar and that it has an entire cup of both shredded carrots and zucchini. I’m all for sneaking more vegetables into my kids’ diets! I also like that it made 2 dozen muffins, instead of just one. 12 muffins would last us all of about a half hour. Even still, we ate them all in 3 days. I won’t tell you how many I ate!

Sunrise Smoothie
Mornings are hectic at our house! Between trying to help my three oldest kids get off to school, taking care of my two littlest kids and attempting to get myself ready, I often feel like I’ve ran a marathon by 10 am each day. One thing that’s non-negotiable in our crazy mornings is a good breakfast. I’ve always been a firm believer that you can pretty much tackle anything the day throws at you if you’ve had a delicious, filling breakfast. One key to a stress-free morning is to prepare anything you can the night before. Choose outfits, make sure backpacks are ready to go, make lunches and, in my case, freeze the orange juice into cubes so that I could make these Sunrise Smoothies to go along with our breakfast.
