Nutella Banana Muffins are an absolute hit with my kids, and they usually eat the whole batch within a few hours every time I make them! There is really only a tiny bit of Nutella in each muffin, but it is just enough to make them seem like a treat even though the muffins are actually fairly healthy! My kids are constantly asking me to make the Nutella muffins, and it is a great way to use up over-ripe bananas.
Can you use frozen bananas in banana muffins?
A lot of people freeze over ripe bananas to use them later on in banana muffins. It’s a simple way to amass a collection of ripe bananas to use in this recipe. you don’t even have to peel the bananas prior to freezing! Once you’re ready to use them in this banana bars recipe, thaw them out slightly, then peel them and place the bananas in a bowl. Once they’re fully thawed, drain out any liquid and proceed with the recipe.
How can I ripen bananas quickly?
Ripe bananas are used in banana bread because they have a stronger, more pronounced flavor. There are several ways to help bananas ripen faster so that you can make banana bread. Here are my preferred methods:
- Ripen bananas in the oven. Heat the oven to 350° F and line a baking sheet with parchment paper. Place bananas peel and all on the parchment and bake for 30-40 minutes, until peels are black & shiny. Let cool 1 hour and proceed with banana muffin recipe.
- Ripen bananas in a paper bag. If you have more time, place bananas in a paper bag with an apple. Fold and secure closed. I usually leave bananas like this for a full day, then proceed with the Nutella Banana Muffin recipe.
Ingredients in Nutella Banana Muffins
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 tsp. baking powder
- 1/2 tsp salt
- 1/2 cup butter, softened to room temperature
- 3/4 cup sugar
- 2 eggs
- 3 over-ripe bananas, mashed
- 1 tsp. vanilla
- 1/4 cup Nutella
How to make Nutella Banana Muffins
- Line a muffin tin with paper liners or coat with cooking spray.
- In one bowl, combine flours, baking powder and salt.
- In another bowl, beat butter and sugar with an electric mixer for about 2-3 minutes. Beat in the eggs, vanilla and mashed bananas until smooth.
- Gradually add the flour mixture.
- Divide the batter into the 12 muffin cups. Scoop 1 tsp. of Nutella on top of each muffin and swirl it into the batter with a toothpick or knife. Most of the Nutella will be on the top this way which is fine – we love them this way! (If you want the Nutella to be more incorporated throughout the entire muffin, you could put a scoop of it in the middle. To do this, just scoop about half of the batter into the muffin tin, add Nutella, and then add the rest of the muffin batter. I would still add a little bit of Nutella on top as well and then swirl it all together.)
- Bake muffins at 350° for 20-22 minutes.
Can Nutella Banana Muffins be frozen?
I love freezing banana muffins! How you prepare the muffins for freezing really depends on how long you intend to keep them frozen. If you just want to freeze them for a week or two, I’d wrap them in plastic wrap or foil and place the muffins in a large freezer ziplock bag. If you want to freeze them for 2-6 months, I’d wrap them more securely, making sure each muffin is airtight by wrapping it in a double layer of foil or plastic wrap, then place it in a ziplock bag.

Hey, does adding the nutella into the middle of the muffins make it go gooey when you bite into it, like a filling? Or does it set? 🙂

Since the Nutella is swirled in, it sets up pretty well. If you prefer a gooey center, you could add a scoop of Nutella in the middle of the batter and don’t swirl – that sounds delicious too!
