Cinnamon Roll French Toast Casserole
I love brunch. I love the bacon, breakfast potatoes, muffins, juice.. you name it, I love it!
Cinnamon Rolls are one of my favorites. I love the soft bread, cinnamon filling and don’t even get me started on the glaze!
The only thing I don’t absolutely love about cinnamon rolls is how much time, effort and attention they need. Especially when other breakfast items need so much attention (I’m looking at you bacon & eggs!).
This Cinnamon Roll French Toast Bake is the answer to all of the questions I’ve ever had.????
It honestly couldn’t be any easier! Toss it together, forget about it and focus on that aforementioned bacon.
How to make Cinnamon Roll French Toast Bake
For this recipe, I used Pillsbury Grands Cinnamon Rolls. Make sure to use the Grands, the other cinnamon rolls are smaller and do not equal the same amount of dough once cut up.
Use kitchen shears to cut the cinnamon rolls into bite sized pieces.
Place the bite sized pieces of the cinnamon rolls into a greased 9×9 baking dish or a baking dish similar in size.
Combine together an egg, some milk and vanilla. Wisk together thoroughly.
Pour the egg mixture over top of the cinnamon roll dough. Make sure to drizzle evenly.
Cover with foil and bake at 350° for 20 minutes. Remove the foil and bake for an additional 10 minutes.
The French toast bake will have puffed up and will be golden brown when you take it out of the oven.
Pull out of the oven and immediately drizzle with icing.
You can use the icing that comes with the cinnamon rolls or make your own icing with some butter (1/4 cup), powdered sugar (1 1/2 cups), milk (1-2 tbsp) and vanilla (1 tsp).
Serve while warm.
This recipe can easily be doubled! If doubling, bake in a 9X13 pan.

- 1 17.5 oz Pillsbury Grands Cinnamon Rolls
- 1 egg
- 1/8 cup milk
- 1 tsp vanilla
Instructions
- Preheat oven to 350°.
- Cut the cinnamon roll dough into bite sized pieces and sprinkle evenly into a greased 9×9 oven safe pan.
- Whisk together the egg, milk and vanilla.
- Drizzle the egg mixture over the cinnamon roll dough.
- Cover with foil and bake at 350° for 20 minutes. Remove the foil and bake for an additional 10 minutes.
- Drizzle the included icing onto of the French toast bake.
- Serve immediately.

I’d prep it, then freeze it BEFORE baking it. Then, when you’re ready, thaw, bake and serve.
