Cinnamon Rolls.. made into a cake!!
Cinnamon rolls are a definite fall time treat. I personally like them anytime of the year, but they are a definite must when the temperature starts to cool off, when a jacket is needed outside.. when boots and scarfs are the accessories of choice..
I might be a little excited for the cooler temps, if you can’t tell. 😉
BUT- who has time to make cinnamon rolls every time the craving strikes? With school-time craziness back in full swing and fall sports starting up, the answer definitely is, not most of us.
And that is where this cake comes in to save the day.
Sweet Breakfast Cake
I say cake, but really it’s almost more of a muffin in cake form. The cake itself is not very sweet at all, it resembles the bread portion of a classic cinnamon roll extremely well.
The sweetness comes from the cinnamon and sugar swirl on top. #allthehearteyes
Sometimes I even put a cinnamon and sugar swirl layer halfway through the cake. Simply delicious!
The batter comes together in under 10 minutes with the help of an electric mixer (either handheld or stand!) and bakes in the oven for 40 minutes.
That means you can pop it in the oven, eat dinner and pull it out right in time for dessert afterwards!

How to make the perfect Cinnamon Roll Cake recipe
Are you ready to see how easy this is?? Buckle up.. lets go!!
Add softened butter, sugar, an egg, flour, baking powder, salt and milk to a large bowl.
Using your hand held mixer, combine all of the ingredients until the batter is smooth.
Melt some butter in the bottom of an 8×8 inch pan. Pour and spread the batter into the pan.
Sprinkle cinnamon and sugar on top of the cake.
Use a toothpick to swirl the top of the batter, incorporating the cinnamon and sugar into the cake a bit.
If you really like your cinnamon and sugar, give yourself an extra cinnamon and swirl layer in the middle of the cake!
Spread half of the batter into the pan, swirl some cinnamon and sugar on top and then repeat with the remaining batter.
Bake at 350° for 40-45 minutes or until a toothpick comes out clean.
Top the warm cake with vanilla glaze. The vanilla gaze is made with butter, powdered sugar, milk and vanilla.
Serve warm and enjoy!!

- 4 tbsp butter softened, divided
- 1 cup granulated sugar
- 1 egg
- 1 cup milk
- 2 cups flour
- 3 tsp baking powder
- 1/2 tsp salt
- 1/4 cup sugar + 1 tsp cinnamon mixed
Vanilla Glaze ingredients
- 2 tbsp butter softened
- 3/4 cup powdered sugar
- 1/2 tsp vanilla
- 1 tbsp milk
How to make Cinnamon Roll Cake
- Preheat the oven to 350°.
- Mix together 3 tbsp butter, sugar, egg, milk, flour, baking powder and salt. Mix until you have a smooth batter.
- Melt the remaining 1 tbsp of butter in the bottom of an 8×8 inch baking pan. Pour the batter into the pan.
- Sprinkle the cinnamon and sugar on top of the batter, use a toothpick or fork to swirl the cinnamon and sugar into the batter.
- Bake at 350° for 40-45 minutes or until a toothpick comes out clean. Pull the cake out of the oven and make the vanilla glaze while the cake cools slightly.
- Mix together all of the glaze ingredients until smooth. Pour over the cake and serve warm

This was super easy to make. Just dump all the ingredients in, mix and pour into the pan. It was so moist – everyone that’s tried it has said it was very yummy. I doubled the recipe for a 9×13 pan. I think the next time I make a double recipe, I will put some of the cinnamon sugar mixture in as a middle layer. I would give it 5 stars.

Forgot to mention this in my previous comments – I made this for a group of students that has a dairy intolerant member. I used water instead of milk and Crisco butter flavored shortening instead of butter for the cake and the glaze. Worked great!
