We’ve always loved having breakfast for dinner and this Loaded Breakfast Burrito recipe is perfect for it! The idea behind the quantities here is that you eat some of the breakfast burritos for breakfast, or dinner, and then you freeze any remaining burritos. It’s so wonderful having a hearty, delicious breakfast that’s all ready- just pop it in the microwave and you’re off. These breakfast burritos have 24 grams of protein each! My teenage son was in heaven!
What do you put in a breakfast burrito?
Breakfast burrito staples for me are: bacon or sausage, eggs, cheese and tomatoes. You can sprinkle some cumin on top and add some hot sauce too. These are loaded breakfast burritos so I put several different breakfast foods in them. I love the pork sausage AND bacon, the eggs and hash browns that were cooked with peppers and onion. I put cheese both on the bottom of the burrito and the top of all the filling. Yum!
I love using Hunt’s Petite Diced tomatoes in this recipe because they add a great, fresh flavor to the breakfast burritos. I like the Hunt’s Petite Diced tomatoes, but I also think the Fire Roasted Diced Tomatoes would be fabulous! Hunt’s prepares their tomatoes differently than other brands and you can taste the difference. Tomatoes are vine ripened and are canned within hours of being picked. Their tomatoes are peeled using steam- no chemicals involved. All this helps their canned tomatoes to be sweet, flavorful and ready to be made into breakfast, dinner, or both!
How to make Breakfast Burritos Healthier
While breakfast burritos do have a lot of protein, they aren’t considered “healthy” by most. Here are some ideas to make breakfast burritos healthier:
- Use Egg Beaters instead of regular eggs. You’ll need 2 1/2 cups for this recipe.
- Use turkey sausage instead of pork sausage.
- Cut the amount of cheese in half.
- Use whole wheat tortillas instead of regular flour tortillas.
What tortillas are best for making breakfast burritos?
The tortillas are actually one of the most important parts of a breakfast burrito because they can really make or break the whole process. You have to use very fresh tortillas so that they have a bit of chewiness to them- which means they’ll stretch a bit to accommodate a lot of filling and folding. I prefer to use the uncooked flour tortillas you find in the refrigerated section at the grocery store. It takes about 15 minutes to heat and cook all 10 tortillas, but it’s completely worth it!
Loaded Breakfast Burrito Recipe
- 1 14.5 oz can Hunt’s Petite Diced Tomatoes
- 8-10 slices cooked & crumbled bacon
- 1 lb cooked pork sausage (I used Odom’s Tennessee Pride Sausage)
- 1/2 cup diced onion
- 1 cup diced sweet peppers
- 2 TBSP olive oil
- 2 cups Southern Hash Browns
- 10 large eggs
- 2 cups shredded Cheddar Jack cheese
- 10 ten inch flour tortillas, freshly cooked
- Cook & crumble the bacon & sausage and set aside.
- Heat onion in a medium skillet with 2 TBSP oil. Add peppers and hash browns and cook 10 minutes, set aside.
- Whisk eggs. Add salt & pepper, then scramble in a medium saucepan. I like to cook them in a bit of the bacon grease. Set aside.
- Drain tomatoes in a colander and transfer to a bowl. Heat for 1 minute in the microwave. Set aside.
- Arrange all burrito filling ingredients along the top part of a large table or countertop. Spread out all ten tortillas along the same countertop. Begin topping tortillas with each item, arranging the toppings in the center of the tortilla, in a line, starting with and ending with shredded cheese.
- To fold each burrito, take one side running parallel with the line of burrito filling and pull it up and over the filling. Press the filling and tuck the tortilla under the line of filling. Tuck each side of the tortilla in towards the center of the burrito, then roll the whole burrito so that the filling is completely enclosed. - Enjoy! Freeze any remaining burritos in a large freezer bag. You’re welcome to wrap each individually in foil, plastic wrap or a paper towel, prior to freezing. To reheat, microwave on defrost for 1 minute, followed by full powder for 1 minute 15 seconds. Let sit for 2-3 minutes, then enjoy.
