It’s that time of year again when the kids are all headed back to school! One of the things that I am really trying to do this year is to make sure that my kids get a good, healthy breakfast before they head out for the day. It’s very tempting to just let them pour a bowl of cereal and call it good (and let’s be honest – some days that’s all we have time for!), but I know that they need something a little bit heartier to last them all the way until lunch! Pancake Breakfast Sandwiches are the perfect solution!
My whole family loves Krusteaz mixes, especially the Buttermilk pancake mix. The pancakes taste amazing turn out perfectly every single time! I love that they are just so easy to make – all you have to do is add water to the mix and stir for a minute or two. The filling for these breakfast sandwiches can be also be made in advance and if you make a double batch, you’ll have enough for 2-3 days which will save you time in the mornings.
My kids love choosing their own fruit to go in their little sandwiches and they absolutely love the maple whipped cream filling. I like the maple whipped cream because it is mostly cream with just a hint of syrup, making it a lot less sugary and it is a lot less sticky too! I love that they can eat two pancakes in the time that it normally takes to eat one since you are stacking them together into a sandwich! This is really important for my kids since they tend to eat very slowly in the mornings – anyone else have kids that have a hard time getting going early in the morning before school?!
Pancake Breakfast Sandwiches
- 2 cups Krusteaz Buttermilk Pancake mix
- 2/3 cup cold water (or milk)
- ½ cup heavy whipping cream
- 2 Tbsp maple syrup
- fresh fruit (raspberries, blueberries, bananas, etc.)
- In a large bowl, whip the cream until stiff peaks form. Fold in the maple syrup and keep refrigerated until ready to use (up to 3 days).
- Prepare 12 pancakes according to the directions on the Krusteaz Buttermilk Pancake mix package.
- Let the pancakes cool for just a couple of minutes and then spread some of the maple whipped cream on one side of a pancake. Add fruit as desired and then place another pancake on top, making a sandwich.
