Despite what you may be thinking, these pancakes are actually not overly sweet. They have a little bit of honey to counter the bitter taste of cocoa and are a bit more savory like your standard pancake recipe. What really makes these sweet is the toppings you choose to pour over the top.

How to make Double Chocolate Pancakes
Batter
In a large mixing bowl, whisk together all of the pancake ingredients until well combined. The order in which you combine these ingredients does not matter, just that they are all mixed together completely.
Let the batter sit and rest while you start to preheat the griddle or pan for cooking the pancakes.
Cook
Heat the pan to medium temperature for about 3-5 minutes, allowing the pan to heat evenly over the entire surface.
Then, lightly spray the griddle with non-stick cooking spray to prevent the pancakes from sticking. You can also use butter and spread it over the pan as well.
Next, pour or spoon about a ¼ cup of the pancake batter onto the griddle to form your pancakes.
Flip them over after about 2-3 minutes, when the bubbles form in the center, and the edges look set. Then cook the other side until golden.
Serve

Can I make chocolate pancakes in advance?
Yes, you can prepare the pancake batter up to a day in advance and keep it in a covered bowl or gallon-sized Ziploc baggie in the fridge. When you are ready to make the pancakes, pull out the batter and use immediately.
Is it better to cook pancakes in butter or oil?
Cooking your pancakes in a buttered pan is always great for added taste, but it can cause discoloration on your pancake if the temperature of the pan isn’t just right. A hot pan will brown the butter fairly quickly and cause your pancakes to look burnt, even if they aren’t.
Why are my pancakes raw in the middle?
If you find that your pancakes are properly cooked on the outside but still raw on the insides, it is most likely because you had the griddle turned up too hot. When the heat is turned up too high, the outsides of the pancakes cook much more quickly than the insides, trapping the raw dough inside. Adjust the heat and cook your remaining pancakes at a lower temperature.

Is the amount of baking powder and salt correct? I'm not experienced in recipes like this, but it seems like a lot to me.

It's correct! The amount of baking powder you put in pancakes correlates to how fluffy they are. I based this recipe off one I got from a friend and that actually called for MORE baking powder. I like this amount though as the pancakes hold together better. Too little baking powder and your have flat pancakes… too much and your pancakes crumble. <br /><br />Try them- you'll like them! 🙂
