Apple German Pancake, also known as a Dutch Baby Pancake, made with flour, milk, eggs and fresh apples. The apples add so much flavor to this classic German pancake recipe!
What is a German Pancake?
German Pancakes are large, fluffy pancakes that are baked in the oven. They are much lighter than traditional pancakes because they have more eggs, less flour and no baking soda or baking powder in them. Traditional German Pancakes don’t have much flavor, so they are served with syrup or jam or powdered sugar. This version has tons of flavor with the addition the apples baked in cinnamon and sugar at the bottom of the pancake.
Ingredients in Apple German Pancake
Apples: Make sure to use a tangy variety of apples – like Honeycrisp, Granny Smith or Fuji apples. The firmer, the better! You will need 2 large apples for this recipe. They will need to be peeled, cored, and thinly sliced.
Butter: You’ll divide the butter in half. Half of it will be placed in the pan at the beginning to bake with the apples, and the other half will be poured over the top of the pancake just before baking.
Sugar: The sugar also gets divided in half – half goes with the apples and the other half adds a little sweetness to the pancake.
Cinnamon: Just a little bit of cinnamon will add a lot of flavor to the apples as they cook.
Eggs: You’ll need 3 large eggs to provide the base ingredient for your German pancake.
Milk: You can use any type of milk that you have on hand – I usually use 1% because that’s what we always have in the fridge.
Flour: All-purpose flour works the best, but you can use wheat flour if you want to. It does affect the flavor and consistency quite a bit, so keep that in mind.
How to make Apple German Pancakes
Preheat oven to 425°.
Smear 2 tablespoons of butter in the bottom of a pie dish or oven proof skillet. Cover bottom with apples and then sprinkle with cinnamon and 2 tablespoons sugar. Bake for 10 minutes.
Mix eggs, milk, flour and the remaining 2 tablespoons of sugar. Pour over the baked apples.
Melt the remaining 2 tablespoons of butter and pour butter over everything else in the pan.
Bake 15 minutes or until browned and puffy. Sprinkle with powdered sugar and serve hot.

- ½ cup milk

WHEN ARE APPLES IN SEASON?
Apples are a Fall crop, so plan on the best apples being ripe in late August or early September through early November. Of course, it depends on where you live and the climate in your area. I love making apple recipes in October, when I get an abundance of apples from a local orchard.
What kind of apples do I use in a German Apple Pancake?
You’ll need 2 large apples, peeled, cored, and thinly sliced. I really like using Granny Smith apples, but you can use a different type of tart apple if you prefer. My other favorite apples for baking are HoneyCrisp apples, Pink Lady or Fuji. Firm apples definitely work the best, so avoid softer apples (like Red Delicious) when choosing your apples to bake with.
