Pancakes are a favorite at my house – they are easy to make and even my pickiest eater is usually pretty happy to eat them. I love finding ways to spice them up a little bit or add a seasonal flair, and these gingerbread pancakes are perfect for winter.
Gingerbread Pancakes are absolutely amazing with your favorite kind of syrup, or you can serve them with whipped cream on top if you’d like. Or both! Our favorite kind of syrup is this Amazing Butter Syrup recipe that is made with butter, sugar, cream and vanilla.
Ingredients in Gingerbread Pancakes
Flour – All-purpose flour works best, but you could swap in all of part with wheat flour. The consistency of the pancakes will be more dense, but the flavor doesn’t change too much.
Baking powder – This is the leavening agent in the pancakes and what makes them light and fluffy! For best results, make sure your baking powder isn’t old or expired.
Cinnamon and ground cloves – A half a teaspoon of cinnamon and a half teaspoon of ground cloves add so much flavor and the perfect amount of spice to these pancakes.
Molasses – Molasses is the main ingredient to give these pancakes that classic gingerbread flavor. Regular molasses works best, so avoid blackstrap molasses.
Milk – Any variety of milk will work great. Regular milk or dairy-free alternatives all provide creaminess and moisture that is needed for the pancakes.
Oil – Canola or vegetable oil work great, but I use coconut oil often too.
Egg – You just need 1 egg for the pancakes. Just make sure to beat the egg slightly with a fork before adding to the batter.
How to make Gingerbread Pancakes
Mix flour, baking powder, cinnamon and cloves and set aside. Mix remaining ingredients and then add to flour mixture, stirring just until combined. Mix well. Drop by 1/4 cupfuls onto a hot non-stick skillet or griddle (heated to 350°).
Flip the pancakes when bubbles form on the surface, cook until both sides are golden brown. Add butter, pour syrup on top, or serve with whipped cream and cinnamon. Or all of the above!

- 1 Tbsp vegetable oil
- 1 egg beaten slightly

What to serve with Gingerbread Pancakes?
Pancakes are such a great base for breakfast and it’s easy to add a couple of sides to round out the meal. I like to serve pancakes with scrambled eggs and fresh fruit, or even a simple fruit salad. And don’t forget the bacon…this is the easiest way ever to make bacon!
CAN YOU FREEZE GINGERBREAD PANCAKES?
Yes, you can freeze pancakes by first cooking them, cooling them and storing them in an airtight container. Frozen pancakes can last up to 2 months in the freezer. To reheat, you can thaw them using the defrost function on your microwave, then either continue heating in the microwave or toast them.
ARE GINGERBREAD PANCAKES HEALTHY?
Our gingerbread pancakes don’t have any added sugar, but I’m not sure I would consider them healthy. They do have a lot of flavor, so you don’t really need to add syrup. A little dollop of whipped cream on top is plenty sweet!
To make these pancakes healthier, you can use whole wheat flour. Another thing you can do is swap in protein pancake mix (Kodiak) for the flour and baking powder. This adds a lot of protein which makes the pancakes more filling. You can also make the recipe as instructed, but add a scoop or two of vanilla/snickerdoodle protein powder.
