Banana Pancakes are always a favorite, but these ones are the easiest ones ever to make. Just three ingredients all thrown together in the blender for easy mixing and pouring. No need to get a lot of dishes dirty. We love to serve these pancakes with maple syrup, but they are delicious with whipped cream and fruit too!

TIPS FOR THE FLUFFIEST PANCAKES
If you want the end result to be the fluffiest of fluffy pancakes you will want to make sure that you let the batter rest for about 3-4 minutes after mixing. That step is what helps to get the pancakes big and feathery. The air bubbles it gets while resting are your friends! Just watch, when you make these on a Sunday morning, they disappear before you know it.
Not only that, but wait to pour any batter onto your griddle until its nice and hot. You want water to sizzle as a sign that it is the proper temp. Also, hold off on flipping the pancake until bubbles are covering the top and the edges look dry/solid. And last but not least, NEVER squish the pancake down.
Ingredients in 3 Ingredient Banana Pancakes
Bananas – You will need 2 large bananas that are over-ripe. The more over-ripe, the better!
Eggs – You will need 3 eggs to bind everything together and provide the right texture for the pancakes.
Self-rising flour – Make sure you use self-rising flour! This already has some salt and baking powder mixed into it which makes it so convenient because then you don’t have to add those additional ingredients to make the pancakes light and fluffy.
How to make 3 Ingredient Banana Pancakes
Puree the bananas in a blender until smooth. Add the eggs and mix until combined. Add in the flour and pulse just until combined. Let the batter rest for about 3-4 minutes while the griddle heats up.
Lightly grease a skillet or griddle and heat to about 350° (medium heat). Drop batter (about 1/3 cup) onto the hot skillet and cook for about 2-3 minutes or until tiny bubbles start to form. Flip the pancakes over and cook for another 1-2 minutes or until both sides are a light golden brown. This recipe should make about 6 large pancakes.
Serve with syrup or whipped cream and sliced bananas (and/or other fruit).

- ¾ cup self-rising flour

How to make bananas ripen faster
There are a few different ways to ripen bananas faster if you need them for a recipe.
-You can prick the banana (with the skin on)all over and then place on a plate and microwave for 30 seconds. Keep microwaving in 30 second increments until the bananas are as soft as you’d like.
-Place bananas (skins on) on a baking sheet covered with parchment paper. Bake at 300° for about 30 minutes or until skins are black.
-Place bananas in a paper bag and close. This method will take a little longer but often is effective enough to ripen bananas overnight.
Substitute for self-rising flour
Self-rising flour is convenient because it has a raising agent already mixed into it. If you don’t have any on hand, it is super easy to make your own. The ratio is as follows: 1 cup all-purpose flour to 1/2 teaspoon of salt and 1 1/2 teaspoons of baking powder.
To make 3/4 cup of self-rising flour (as needed for this recipe), use 3/4 cup all-purpose flour and mix it with 1/3 teaspoons salt and 1 teaspoon of baking powder. Once mixed, add to recipe as directed in place of the self-rising flour.
Ideas for Banana Pancake mix-ins
These Banana Pancakes are delicious just the way they are, but if you want to jazz them up a bit, here are some ideas! You could add cinnamon, pecans, chocolate chips, blueberries…we love all of these when added! I like to add a scoop of vanilla or snickerdoodle protein powder as well if I’m trying to add some protein to my breakfast.
CAN I FREEZE THESE PANCAKES FOR LATER?
Absolutely! If you plan on freezing these pancakes, then I highly recommend freezing them flat on a parchment-lined baking sheet for at least an hour or two before transferring them to a Ziploc bag. This will keep them from sticking to one another so that when you want to eat a pancake you can grab as many as you want without trouble.
How to reheat pancakes
You can reheat pancakes quickly in the microwave (about 10-15 seconds), but I prefer to throw them in the toaster to help crisp them up a little bit. Just toast them just like you would a piece of toast! Toaster ovens or air fryers work great too!
