Sausage Patty Pancake
Breakfast is easily my favorite meal and I could eat it any time, morning, day or night. I have never been one to pour a bowl of cold cereal and call it good. I love a big hearty meal with all the fixings! My kids are happy with a simple cereal, but I am usually the one making an omelet with hash browns and fruit. Or whipping up a batch of tasty waffles. Or, in this case, fluffy pancakes. These aren’t just any pancakes though, they have a sausage patty inside! Honestly, these taste so incredible you and your family are sure to love them as much as mine does.

Sausage Patty Pancake Ingredients
Egg: Use 1 egg to help create great batter texture for the pancakes.
Milk: Add in 1 cup of milk for the perfect pancake batter consistency.
Butter: You need 1 tablespoon of melted butter to give a nice rich flavor to these pancakes.
Flour: For the base of this pancake recipe you will need 1 ¼ cup flour. I used ¾ cups whole wheat flour and ½ cup all-purpose, I feel like they are a tab bit healthier and I have zero guilt indulging.
Baking powder: Using 1 tablespoon of baking powder will help these pancakes puff up nicely as they cook.
Salt: Adding in ½ teaspoon of salt helps balance all the wonderful flavors in this recipe.
Brown sugar: By adding in 1-2 tablespoons of brown sugar it adds an amazing depth of sweet flavor. Add 1 or 2 depending on how sweet you like your pancakes.
Sausage patties: You will need 5 sausage patties for the center of these homemade pancakes.
How to make Sausage filled Pancakes
Batter
In a medium size bowl, whisk together the egg and milk. Then, melt the butter in the microwave and add to the egg mixture. Stir to combine.
In a separate small bowl, combine all the dry ingredients, flour, baking powder, salt and brown sugar. Then transfer the dry ingredients to the bowl of wet ingredients, whisk until combined and most of the lumps are gone.
Set the batter aside for about 10 minutes. Letting your pancake batter sit before cooking yields more fluffy pancakes! If you are in a rush, you can skip this part too of course.
Cook
While the batter is sitting, get your griddle preheating to 325 degrees F. If you are using a pan on the stove, use medium heat.
Then, spray the griddle or pan lightly with cooking spray and set the sausage patties on it and let them warm up for about 2 minutes on each side. Pull the sausage off the griddle and place on a plate within easy reach.
Next, ladle about ¼ cup of batter onto the griddle 5 times, spacing them out as best as you can. Let the batter cook for about 1 minute, then set a sausage patty in the center. Ladle a bit less than ¼ cup of batter on top of the sausage, using a spoon to cover it. Let cook for another 2-3 minutes, until the edges look dry and bubbly. Flip and cook an additional 2-3 minutes.
Remove the pancakes from griddle, lather with butter and syrup, serve immediately and enjoy!

CAN I MAKE THESE PANCAKES IN ADVANCE?
Yes, you can prepare the pancake batter up to a day in advance and keep it in a covered bowl or gallon-sized Ziploc baggie in the fridge. When you are ready to make the pancakes, pull out the batter and use immediately.
IS IT BETTER TO COOK PANCAKES IN BUTTER OR OIL?
Cooking your pancakes in a buttered pan is always great for added taste, but it can cause discoloration on your pancake if the temperature of the pan isn’t just right. A hot pan will brown the butter fairly quickly and cause your pancakes to look burnt, even if they aren’t.
WHY ARE MY PANCAKES RUBBERY?
If the texture of your pancakes is rubbery, gummy, or flat, you may have overmixed the pancake batter. You want to mix your ingredients until they are just combined. It’s okay for pancake batter to have some small lumps, you do not need to make it smooth.

Sounds like a perfect Sunday breakfast the whole family will enjoy! Thanks for sharing!
