Pumpkin Pancakes with Apple Cider Syrup begin with a pancake mix for an easy fall breakfast. The pancakes are full of pumpkin flavor and the homemade syrup is absolutely incredible!
One of my greatest challenges in fall is choosing between pumpkin and apple and so I love it when I can use them both at the same time! Some of my favorite fall recipes include pumpkin and apple together…it’s one of my favorite flavor combinations!
Add some pumpkin and pumpkin pie spice to your favorite pancake mix to make the easiest pumpkin pancakes ever. You can even throw some chocolate chips in there if you really want to splurge. The pancakes themselves are amazing, but what really takes this breakfast over the top is the homemade syrup made with apple cider. The apple and pumpkin flavors just go so well together!
How do you make Pumpkin Pancakes?
I have used many ” completely from scratch” pumpkin pancake recipes and they have all been good, but I love how easy it is to just add some pumpkin and pumpkin pie spice to a regular pancake mix. I always have lots of pancake mix on hand, so this is definitely the most convenient way to make pumpkin pancakes. You can even use a protein pancake mix (like Kodiak) and it’s a great way to have a high protein breakfast.
Ingredients in Pumpkin Pancakes
Eggs – Just 2 eggs are needed in this pancake recipe.
Milk – Any type of milk works great, so if you use a dairy-free alternative, that’s totally fine!
Pumpkin – You’ll need about 1/2 cup of pumpkin puree. Canned works great, but you can use a homemade version if you prefer!
Oil – Canola or vegetable oil work well, or even coconut oil works great too! You can even swap this out with melted butter if you’d like.
Pancake mix – Use any brand you want! We usually use Kodiak around my house because I like the extra protein and it works well in this recipe, but you can use any kind!
Pumpkin pie spice – A delicious blend of cinnamon, ginger, nutmeg and cloves. Easy to make your own if you don’t have any, but this spice is an absolute staple at my house in the fall – it seems like I use it in almost every recipe I make!
How to make Pumpkin Pancakes
In a large bowl, beat eggs well. Add milk, pumpkin and oil and mix until well combined. Whisk in pancake mix and spices until batter is smooth. If it seems a little too thick, you can add a little bit more milk to thin it out.
Cook on lightly oiled griddle heated to 350°. Cook on one side until bubbles form on the top and then flip and cook another 1-2 minutes or until both sides are slightly golden brown. (Makes about 12 pancakes).
Ingredients in Apple Cider Syrup
Sugar – Just regular granulated sugar is what you’ll need to add the sweetness to the syrup.
Cornstarch – A little bit of cornstarch will provide the thickness to the syrup so that it isn’t too runny.
Pumpkin pie spice – More pumpkin pie spice! Can’t have too much when it comes to fall recipes!
Apple cider – This is the main ingredient in this syrup and provides most of the flavor. You can use regular apple juice, but the flavor won’t be quite as intense.
Butter – Makes the syrup rich and creamy and even more delicious. Use real butter for best results.
How to make Apple Cider Syrup
Mix sugar, cornstarch and spice in a sauce pan. Add apple cider and cook over medium heat until mixture boils. Turn heat to low and allow syrup to simmer for several minutes, or until it starts to thicken up. Add butter, 1 tbsp at a time, stirring until completely melted. Remove from heat and pour over pancakes.

My granddaughters requested pumpkin pancakes after watching me roast one for pies. This recipe was so delicious. I used a cup of puree instead of the half cup called for so I just added milk a little at a time to get the consistency I wanted. They were so light and fluffy and perfectly seasoned.
