Mornings are hectic at our house! Between trying to help my three oldest kids get off to school, taking care of my two littlest kids and attempting to get myself ready, I often feel like I’ve ran a marathon by 10 am each day. One thing that’s non-negotiable in our crazy mornings is a good breakfast. I’ve always been a firm believer that you can pretty much tackle anything the day throws at you if you’ve had a delicious, filling breakfast. One key to a stress-free morning is to prepare anything you can the night before. Choose outfits, make sure backpacks are ready to go, make lunches and, in my case, freeze the orange juice into cubes so that I could make these Sunrise Smoothies to go along with our breakfast. (Tip: freeze a week’s worth of orange juice for these smoothies Sunday night!)
I picked up several boxes of the new Aunt Jemima® Griddle Melts™ at Walmart last week and was so excited for my kids to try them. I love the idea of a cold cereal alternative that doesn’t take long to make. Most of my family prefers a sweet breakfast and these Griddle Melts™ are a great compromise. They’re packed with protein and the sweet maple sauce on the savory varieties tastes delicious! We enjoyed them all but my favorite was the Sausage, Ham & Bacon. They can be made in the microwave in less than 2 minutes, although I found if I popped them in a warm oven on low broil for an additional 2 minutes, the bread on the bottom was perfectly toasted. They’re so easy to make and my kids had a wonderful, hot breakfast, in under 5 minutes! I consider that a win in my book.
I served the Griddle Melts™ with my favorite Sunrise Smoothies. Just a few ingredients and less than a minute in the blender and they’re done.
Sunrise Smoothie
Serves 1 adult or 2-3 kids
- 1 1/2 cups of orange juice, frozen into a ice cube tray the night before
- 1 banana
- 1 6-oz cup yogurt, any variety
- 1 TBSP honey, optional
Combine all ingredients in a blender and blend for about 45 seconds, until smooth. Serve immediately.
