Triple Berry Almond Bruschetta
This fruit bruschetta recipe is an alternate version of the popular Italian-style Bruschetta with Tomato and Basil.
I came across this recipe in a cookbook years ago and was excited to try it. Of course I made a few tweaks to the recipe and was not even slightly surprised by how delicious it was! I mean, soft bread, a sweet cream cheese spread, and fresh fruit, how could it not be amazing? Bruschetta is typically an appetizer but I think this berry almond version could also work as a breakfast dish or even a dessert too! I love the combination of flavors and textures, it all works so perfectly together.

Triple Berry Almond Bruschetta Ingredients
Cream cheese: For the bruschetta topping, use 4 ounces of softened cream cheese. You can use regular cream cheese or a non-fat or low-fat variety.
Sugar: To sweeten the cream cheese, you will need to add in 1/4 cup of sugar.
Half & Half: You need 2 tablespoons of half and half to create the perfect consistency to the creamy topping. You can use whole or 2% milk instead, but maybe use a little bit less to make sure the topping doesn’t get too runny!
Almond extract: Using 1/4 teaspoon of almond extract gives the topping such a great flavor.
Orange zest: You will need 2-3 teaspoons of grated orange peel to bring some fresh citrus taste to this delicious treat. You could use 1/4-1/2 teaspoon of orange extract if you don’t have fresh oranges on hand.
Orange juice: You need 1 tablespoon of orange juice for this recipe.
Vanilla extract: Use 1 teaspoon of vanilla extract for even more flavor.
Nutmeg: Just a pinch of ground nutmeg adds a great earthy flavor to the recipe.
Bread: You will need 12 slices of a French bread baguette to use as the base of this delicious snack.
Butter: Use butter to coat the bread with a thin layer of butter before baking the bread to prepare for assembling this appetizer. This will help to flavor and crisp up the top of each slice.
Berries: 1 1/2 cups of fresh mixed berries makes this bruschetta pretty and tasty at the same time! I love using strawberries, raspberries, and blueberries, but you can use just one type of berry or you can add in some other fruits if you prefer.
Almonds: Using 1/2 cup of toasted, chopped almonds will give a delicious crunch to this sensational snack.

Prep
Start by toasting the almonds, place them on a baking sheet and bake at 350° F for 5-10 minutes. You want them just lightly toasted, keep a close eye on them so you do not burn them.

Then, add in the sugar, almond extract, orange peel zest, orange juice, vanilla extract and nutmeg, stir until well mixed. Set aside.

Grab a cutting board and slice the French bread baguette into 12 1″ thick pieces.
Next, lightly butter both sides of each slice of bread and place on an ungreased baking sheet.
Broil on high for 1-2 minutes on each side, until golden brown. Watch closely so they do not burn!

How do you soften cream cheese?
If you did not remember to put the cream cheese out ahead of time to soften, no big deal! You can soften it in the microwave easily. Take it out of the foil wrapper, put it in a microwave safe bowl, and microwave on high for 15-20 seconds. You do not want to melt it, you just need it soft and more pliable to mix with the other ingredients.
Is Triple Berry Almond Bruschetta gluten free?
It is not, but it easily could be! By swapping out the French bread and choosing a gluten free variety, you can have a gluten free bruschetta! There are so many great GF bread options these days, try to find one the same size and thickness as a baguette.
How long is berry bruschetta good for?
As much as I would love to say this lasts for a couple days, sadly it does not. This snack recipe is meant to be made and enjoyed immediately after preparing.
If you want to prepare this recipe ahead of time, you can make the cream cheese mixture and keep it in the fridge until you are ready to assemble and serve the bruschetta.
