Butter: Use 1/2 cup salted butter, softened, to help give these bars a nice rich flavor.
Flour: You will need 1 1/3 cups flour, divided, for this recipe.
Sugar: Adding 1 1/4 cups sugar, divided, will give these dessert bars just the right amount of sweetness.
Eggs: You need 4 eggs to create the best consistency and texture for this lemon bar recipe.
Lemon juice: Using 1/2 cup lemon juice, about 2 lemons, will give a lovely tart taste to this treat.
Mixed berries: For great fresh fruit flavor, you need 2 cups mixed berries (blueberries, raspberries and strawberries are a perfect combination for this recipe).
Step by step on how to make Lemon Berry Bars
Prep
Preheat oven to 350°F.
Grease an 8 x 8 pan with butter or spray with non-stick cooking spray.
Making the crust
In a medium size bowl, blend together the butter, 1 cup flour, and 1/4 cup of the sugar. Using an electric mixer helps mix the crust more uniformly. Initially this will be crumbly, but as you mix, it will come together like pie dough so be patient. If you don’t see this happen, adding a teaspoon of cold water should fix it.
Then, press the dough firmly into the bottom of the prepared baking pan.
Bake for 12-15 minutes, the crust should be golden brown when done.
Lemon Berry Filling
In a separate bowl, stir together the remaining 1 cup of the sugar and 1/3 cup flour.
Next, whisk in the eggs and lemon juice. This mixture should be nice and frothy.
Proceed to pour the mixture over the baked crust.
Clean and dice your fresh berries, quarter the strawberries, keep the blueberries whole (unless they are very large, cut them in half) and raspberries keep whole.
Sprinkle the berries over the top of the lemon filling.
Put the baking sheet back in the oven and bake for an additional 20 minutes.
Serve
Once baking is complete, sprinkle immediately with a little powdered sugar to give them an appealing and beautiful appearance.
Make sure you cool these bars completely before serving, this should take about 20-30 minutes depending on the temperature of your house. The lemon will become more firm as it cools.
After cooling, cut into squares and enjoy!

Are these lemon berry bars gluten free?
Good question! They definitely can be. You will need to swap out the flour for your preferred GF flour option to ensure these bars are gluten free. But other than that, all the other ingredients are naturally GF so this is a great recipe for a GF dessert option.
How do you store lemon berry bars?
These dessert bars will keep for up to 1 week if stored in an airtight container or plastic ziplocked bag at room temperature. You could also store them with pieces of parchment or waxed paper between layers to keep them from sticking together.
Can you freeze these dessert berry bars?
Yes! These bars freeze so beautifully. I recommend cutting them into serving sized pieces, individually wrapped with plastic wrap and stored inside of a Ziploc bag for easy access and good airtight storage. They will keep for 2-3 months. When ready to enjoy, let defrost at room temperature for 30-60 minutes.

Hi Kathy- I have no idea why the directions say “whipping cream” -it’s just water and flour that you mix in with the Meyer Lemon filling. 🙂 Thank you for pointing this out- I’ll have Krusteaz change it!
