Extracts– Use 1 teaspoon each of vanilla extract and almond extract for an incredible tasting cake.
Eggs– You will want to use 3 egg whites for the cake to get a soft and fluffy texture, but you can use 2 whole eggs if you prefer.

How to make Easy Berry Cake
Prep
Preheat the oven to 350 degrees F. Then, spray the inside of a 9×13 baking dish with nonstick cooking spray and set it aside.
Make batter
In a large mixing bowl, combine and stir the flour and sugar until mixed.
Next, add in the cold, cubed butter and mix quickly to incorporate so that the mixture looks crumbly.
Using a measuring cup, remove ¾ cups of the crumble mixture and set it aside for later use.
After that, in the large bowl with the remaining crumble mixture, add the baking powder, salt, vanilla and almond extract, milk, and egg whites. Mix together for 3-4 minutes on medium-high speed until well blended.
Proceed to pour the cake batter into the prepared baking dish. Then, sprinkle the berries over the top of the cake batter and distribute the reserved crumble mixture over the top of the entire cake.
Bake
Place the cake in the preheated oven and bake for 30-35 minutes or until golden brown. Allow the cake to cool before adding the icing.
Toppings
In a small bowl, whisk together the powder sugar, vanilla and almond extract and hot water, stir until smooth and lump free.
Continue to drizzle the icing over the top of the cake and let cool until it is set.

How long is berry cake good for?
This cake can be covered and stored at room temperature or in the fridge for up to 5 days (up to one week in the fridge). I recommend eating the cake within 2 or 3 days for the best tasting results.

How to prevent cakes from sticking to the pan:
Make sure to grease the inside of your cake pan well and then add in a dusting of flour to help as well. For chocolate-based cakes, using cocoa powder instead of flour works well but flour is best for the lighter colored cakes. You can also use a nonstick baking spray with flour in the mix to make it a little easier as well but I’ve found that manually adding grease + flour works best as the spray doesn’t always help cakes to come out flawlessly.
