Olive Oil Citrus Bundt Cake

Baked to perfection and then served with a fluffy whipped cream cheese frosting and garnished with fresh orange slices, it is satisfying every time. Also, using olive oil is a healthier fat when compared to vegetable oil or butter and it helps to add in a distinct flavor that pairs wonderfully with citrus. Olive Oil Orange Cake ingredients
For the cake, you will need:
-Flour: You will need 2 ½ cups of all-purpose flour for the base of this recipe.
-Salt: Use 1 teaspoon of salt to help bring out the flavors and enhance the taste of this cake.
-Leaving agents: You will need ¾ teaspoons of baking powder and ¼ teaspoon of baking soda to make this cake rise properly.
-Sugar: Use 1 ½ cups of granulated sugar to make this cake wonderfully sweet.
-Olive oil: Adding in 1 cup of olive oil will give us needed fats to make the cake moist and give us a nice and subtle flavor. This is a healthier option as opposed to vegetable oil or butter, so basically healthy cake.
-Eggs: You will need 2 eggs plus 2 additional egg yolks to get the cake well bound and with good consistency.
-Orange juice: Use 1 ⅓ cups of orange juice to make this cake a wonderful citrusy flavor.
-Milk: You will need 1 cup of milk to help get the batter to the right texture.
-Orange zest: Use 2 tablespoons of freshly grated orange zest for added freshness and citrus taste.

How to Make Olive Oil Orange Bundt Cake
Prep
Preheat your oven to 350 degrees F.
Then, grease and flour the inside of a 9-inch springform cake pan or bundt pan and then set it aside.
Prepare batter
Next, in a small bowl, whisk together the flour, salt, baking powder, and baking soda. Set aside.
In a separate large mixing bowl, whisk together the sugar and olive oil.
Then, add in the eggs and whisk until fully incorporated.
After that, add in the orange juice, milk, orange zest, and vanilla extract. Whisk well until combined.
Lastly, pour in the flour mixture to the orange juice mixture and stir until just combined. Be careful not to over mix.
Bake
Proceed to pour the cake batter into the prepared baking pan and smooth it out into an even layer.
Place into the preheated oven and bake for 48 minutes. Or until a toothpick can be inserted and come out clean or with just a few moist crumbs.
Once baked, remove the pan from the oven and place it onto a cooling rack to cool completely.
After the cake has cooled, release the springform pan sides and place the cake onto a cake stand. If using a bundt pan, flip over and invert onto a cake plate/stand.
Prepare cream cheese topping
In the bowl of a stand mixer fitted with the paddle attachment, mix together the cream cheese, powdered sugar, orange extract, vanilla, and salt.
Continue to beat on high speed for 2 minutes or until smooth and creamy. Scrape down the sides of the bowl as needed.
Transfer the frosting to a different bowl, set aside.
Then, add the heavy cream to the stand mixer bowl. Use the whisk attachment to beat the heavy cream into stiff peaks.
Once the cream has stiffened, add the cream cheese mixture to the heavy cream and use a rubber scraper to gently fold them together until smooth and combined.
Use a rubber spatula or offset spatula to spread the frosting over the entire surface of the cake.
Garnish and serve
If you want to garnish the cake by placing orange slices and fresh mint on top that would add extra appeal to the cake.

How long is olive oil cake good for?
This cake can be kept well stored in an airtight container for up to 3 days in the fridge. You can also freeze the unfrosted cake in an airtight container for up to 3 months. I do not recommend keeping the cake at room temperature as the frosting must be kept chilled for food safety reasons. Unfrosted cakes can be stored at room temperature.
HOW TO PREVENT CAKES FROM STICKING TO THE PAN:
Make sure to grease the inside of your cake pan well and then add in a dusting of flour to help as well. For chocolate-based cakes, using cocoa powder instead of flour works well but flour is best for the lighter colored cakes. You can also use a nonstick baking spray with flour in the mix to make it a little easier as well but I’ve found that manually adding grease + flour works best as the spray doesn’t always help cakes to come out flawlessly.
