What is Marshmallow Strawberry Shortcake?
Marshmallow Strawberry Shortcake is made with a layer of marshmallows that are covered by a simple homemade shortcake recipe. A layer of strawberry Jello and frozen strawberries is poured over the top and baked right into the shortcake. Top with some whipped cream or vanilla ice cream!
Is Marshmallow Strawberry Shortcake healthy?
This is definitely a dessert recipe and isn’t meant to be healthy, but this strawberry shortcake recipe is lower in calories and fat than many other desserts. Each serving only has 165 calories and 5 grams of fat. Add some high protein ice cream and you’ll have a decent amount of protein as well. Plus, there is fruit in it, so it’s definitely about as close to healthy as a non-healthy dessert can be!
Ingredients in Marshmallow Strawberry Shortcake
Marshmallows – You will need a cup of mini marshmallows for the bottom layer of the shortcake. If you only have large marshmallows, you can use about 8 large ones and cut them up into smaller pieces.
Frozen strawberries – 2 cups of frozen strawberries are needed for the recipe. The strawberries need to be crushed. The easiest way to do this is to let them thaw for a few minutes and then smash them with the back of a fork.
Strawberry jello – One small (3 oz) box of strawberry jello is needed to mix into the strawberries. Sprinkle the jello powder over the crushed strawberries and mix it in.
Flour – All-purpose flour works best in the strawberry shortcake recipe.
Sugar – 1 1/2 cups of sugar provide the sweetness in the shortcake.
Shortening – Just a half cup of shortening helps to provide the fat necessary for the cake to stay moist and stick together.
Baking powder – You will need an entire tablespoon of baking powder to act as the leavening agent in the shortcake. Make sure it isn’t old or expired.
Salt – Just a little bit of salt will help all of the other flavors to pop.
Milk – A cup of milk provides most of the moisture for the cake. You can use any type of milk that you’d like.
Vanilla – The higher the quality of vanilla, the better.
Eggs – 3 large eggs will help to bind all of the other ingredients together.
How to make Marshmallow Strawberry Shortcake
Preheat oven to 350°.
Spray bottom of 9X13 pan. Sprinkle marshmallows evenly in the bottom of the pan.
Mix Jello into the strawberries and set aside.
Combine all of the other ingredients and mix well for about 2-3 minutes with an electric mixer. Pour over the marshmallows.
Spoon strawberry/Jello mixture over the top. Bake for 45 minutes. Serve warm with vanilla ice cream or let it cool and add a little bit of whipped cream on top.

Can you use fresh strawberries?
Frozen strawberries work great in this recipe, but you can definitely use fresh strawberries instead. The strawberries need to be crushed up a bit before adding to the strawberries. This is easier with frozen strawberries, but if you slice up the fresh strawberries a little bit, it’s pretty easy to crush them up with a fork.
Can you make other shortcake flavors?
The amazing thing about this recipe is that it is very versatile. Swap out the frozen strawberries and the strawberry Jello with any flavor you’d like! Frozen raspberries and raspberry Jello is delicious. Or frozen peaches and peach Jello. Or you can mix and match. Peach and raspberry. Strawberry and raspberry. Any flavor of Jello can be mixed with any type of frozen fruit!
What to serve with Strawberry Shortcake?
Traditionally shortcake is served with fresh strawberries and whipped cream. This Marshmallow Strawberry Shortcake already has strawberries baked into it, so you can just add a scoop of vanilla ice cream or whipped cream on top. You can definitely still add some fresh strawberries on top – you can’t have too many strawberries!
How to make whipped cream
Whipped cream is absolutely delicious with strawberry shortcake. Classic whipped cream is easy to make! You’ll need 2 cups of heavy cream, 1/2 cup of powdered sugar and 1 teaspoon of vanilla extract.
Pour heavy cream into mixing bowl. (To speed up the process, place a metal mixing bowl in the freezer for about 30 minutes before putting the cream in.) Mix using a stand mixer or hand mixer for 3-4 minutes at medium high – high speed, until mixture thickens. When you pull the whisk up, the cream should form peaks that maintain their shape.
Add the powdered sugar and vanilla, then mix for another minute.
