Strawberry cheesecake bites are tasty little treats that are perfect for summer and spring. With fresh strawberries, cream cheese, and graham crackers rolled into a tasty little ball, these cheesecake balls are portable, fun, and make for a delicious appetizer like dessert.
These are great for parties because they’re just as they sound- a bite or two of delicious light, sweet cheesecake with fresh strawberries mixed in. Don’t forget the hot fudge drizzled on top!
What are strawberry cheesecake bites?
These tasty little balls are everything you love about no bake cheesecake rolled up into little servings. Using graham crackers as the outer crust and filled with a combination of cream cheese, cool whip, and pureed strawberries, every bite is sweet, refreshing, and rich.
Strawberry Cheesecake Bites Ingredients
-Cream cheese: Cream cheese is what makes a cheesecake so delicious, we need 8 ounces (one brick) of softened cream cheese to get that signature flavor and texture.
-Sugar: We can sweeten our cheesecake mixture with 1/2 cup of granulated sugar.
-Vanilla: We need 1 teaspoon of vanilla extract to help us get a good flavor base to enhance the other flavors.
-Cool Whip: Using an 8 ounce tub of Cool Whip (or Whipped Cream) we can make the cream cheese filling a little lighter and fluffier.
-Hot Water: To help activate the gelatin we need 2 tablespoons of hot water.
-Gelatin: We need 2 teaspoons (one envelope) of unflavored gelatin. You can find this in the baking aisle of your local grocery store.
-Strawberries: With 1/2 cup of pureed strawberries we can add that real strawberry flavor to every bite.
-Graham Crackers: We need one sleeve of graham crackers, crushed. You can place the crackers in a Ziploc bag and roll over it a few times with a rolling pin to crush them up into nice crumbs.
How to Make Strawberry Cheesecake Bites
In a bowl, combine your cream cheese and sugar until nice and smooth.
Add in the vanilla and the whipped topping and mix until combined.
In another bowl, combine the hot water with the gelatin and stir gently. Microwave for 15 seconds, and then stir again.
Add the gelatin mixture to the cream cheese mixture and mix again.
Stir in the pureed strawberries.
Transfer the mixture to a pan and place it in the fridge until firm. This should take about 3-4 hours.
Scoop out rounded tablespoonfuls of the strawberry cheesecake mixture and roll it into balls.
Roll the balls into the graham cracker crumbs and set them on another tray. The process is messy, but it helps to roll all of the balls first, then roll them all through the graham crackers so there’s less back and forth.
Chill the cheesecake balls before serving.
If desired, drizzle with hot fudge. Enjoy!
STRAWBERRY CHEESECAKE BITES
Ingredients
- 8 oz cream cheese softened
- 1/2 cup sugar
- 1 tsp vanilla
- 8 oz Whipped Topping or whipped cream
- 2 TBSP hot water
- 2 tsp unflavored gelatin
- 1/2 cup pureed strawberries
- 1 sleeve graham crackers crushed
Instructions
- Combine cream cheese and sugar and mix until smooth.
- Add in vanilla and whipped topping and mix until combined.
- Combine the hot water with the gelatin and stir gently. Microwave for 15 seconds and stir once more. Add into the cream cheese mixture and mix once more.
- Add in pureed strawberries and stir to combine.
- Transfer mixture into a pan and refrigerate until firm. (At least 3-4 hours)
- Scoop rounded tablespoonfuls of the strawberry cheesecake mixture and shape into balls. Roll in graham cracker crumbs and set on a tray. This is a messy process, but I find it’s easier to roll them all into balls first, quick chill in the freezer for 20 minutes, then coat them all in cracker crumbs.
- Chill cheesecake balls until serving. Drizzle with hot fudge if desired.
