What is Strawberry Shortcake Cake?
Strawberry Shortcake Cake is everything you love about Strawberry Shortcake in show stopping cake form. Strawberries and Cream are quickly becoming two of my favorite flavors to put together in recipes! The sweet creaminess of this frosting paired with the bright, fresh strawberries is enough to make my taste buds explode! It is so good! You won’t believe how easy it is to make this cake, too. This is definitely a beginner friendly recipe.
Boxed Cake vs Homemade Cake
There are definitely pros and cons to both a boxed cake mix vs making the cake homemade from scratch. I usually go the boxed mix route for a few reasons. Mainly, the simplicity of being able to have a cake in the oven within a few minutes is so nice with how hectic my day to day is.
If you would rather make the vanilla cake from scratch, go for it! For the recipe and instructions below, I will write it as if using a boxed mix.
How can I make my boxed cake mix taste better?
One thing I always do to help make my boxed cake mixes taste better is by using milk as the liquid instead of water and melting butter instead of using oil. This yields in a rich, moist cake.
How to make Strawberry Shortcake Cake
First, we will need to start with two round cakes. The size of cake pan will depend on your desired thickness for the layers. I used two 6 inch cake pans so the layers would be nice and thick. You could use two 8 inch cakes if you prefer.
Once the cakes are completely cool, pop then in the freezer for 15 minutes and then slice each layer in half. Freezing for 15 minutes will help cut the cake with ease.. and without much crumbing!
Now let’s make the frosting. I can’t say enough about how delicious this frosting is. Just wait and see, you won’t be able to get enough of it! Here is the secret.. the frosting is regular old vanilla buttercream mixed with whipped topping. You get all the frosting flavor with the creaminess of whipped topping!
If you’d rather substitute fresh whipped whipping cream, that would definitely work, too.
Butter, milk, vanilla and powdered sugar are mixed together to make the vanilla buttercream. Fold that into some whipped topping and you’ve got yourself the creamiest, yet stable frosting (and filling) ever!
How to assemble the Strawberry Cake
Place one of the layers of cake on your serving tray. Gently spread about 1/4 cup of frosting onto the top of the cake. Layer sliced strawberries on top of the frosting.
Add the next layer of cake and repeat. When you have made it to the top and final layer, frost the tops and sides of the cake generously. Decoratively arrange strawberries on the top of the cake. Drizzle with some strawberry syrup right before serving, if desired.
Tips on how to make the Perfect Strawberry Shortcake Cake
- Make sure you really butter and flour your cake pans before baking the cake to insure the cake releases from the pan easily.
- Freeze your cakes for 15 minutes right before slicing them into layers.
- Layer the cakes upside down, so the bottom of the cake is the very top layer. This will help make the top of the cake extremely flat.
- Arrange slice strawberries on top of the cake right before serving, so the strawberries look fresh.

Here’s what you need to make our Strawberry Shortcake Cake:
–2, 6 or 8 inch round white cakes (from box or from scratch) made and cooled
–butter softened
–powdered sugar
–milk
–vanilla
–whipped topping, thawed
–1 lb strawberries sliced
–strawberry syrup optional
Step-by-Step Instructions for Strawberry Shortcake recipe
- Slice each round cake in half to create 4 layers. Set the cake layers aside.
- In a medium sized bowl, use and electric hand mixer to combine the butter, powdered sugar, milk and vanilla until smooth.
- Once smooth, add the 8 oz of whipped topping to the bowl and mix on high until completely combined.
- To assemble the cake, place the bottom layer on the serving plate.
- Gently spread 1/4 cup of the creamy frosting onto the layer.
- Top with sliced strawberries.
- Add the next layer of cake on top of the strawberries and repeat numbers 5 & 6.
- Repeat the same steps with the third layer.
- Place the fourth layer on top of the strawberries. Generously frost the top and sides of the cake with the remaining frosting.
- Arrange the remaining strawberry slices on top of the cake right before serving.
- Also right before serving you can drizzle with strawberry syrup, if desired.

Ingredients

- 1 tbsp milk
- 1 tsp vanilla
- 8 oz whipped topping thawed
- 1 lb strawberries sliced
- strawberry syrup optional

Spray whipping cream doesn’t hold shape very well unfortunately. You can use Cool Whip instead.

I made this cake and it is delicious and very pretty. My question is that when I made the icing I didn’t have enough to cover the sides, can I double or triple the recipe? And if so does any of the measurements change?

Will this work with just 2 layer 9 inch cake pan?

2 9 inch cake pans will make the cake thinner and will require a little less baking time ut it should still work.

I used Becel instead of butter, what a mistake! Icing was thin and runny\ I tried to compensate with whipping cream which melted. It’s in the fridge, fortunately it’s just for me and my adult son. I’ll know better next time!
