Strawberry Crisp is a simple summer dessert that will easily become one on your go to list!! It is a great way to use up fresh (or even frozen) strawberries. This recipe is made by slicing up fresh strawberries and coating them in sugar and flour with just a touch of lemon juice and lemon zest. All those delicious strawberries are then covered with an oat topping, baked in the oven until the strawberries are perfectly juicy and the topping is golden and crispy.

How to make Strawberry Crisp
The first step in this recipe is to prepare the strawberries. Give them a good rinsing and make sure they are clean. Slice the leaves from the top and then dice the strawberries into small cubes.
Next, combine the sugar and cinnamon, sprinkle over the strawberries and gently stir to combine. Add the flour and stir again making sure to coat all of the strawberry slices.
Lastly, the strawberries get a touch of lemon. Squeeze the juice of 1/2 lemon over the strawberries, 2 tablespoons of juice. Grate the zest of lemon into the mixture making about 2 tablespoons of zest. Place the strawberries in a greased 11×7 inch baking dish.

-granulated sugar & brown sugar
-cinnamon
-all purpose flour
-quick or old fashioned oats
-a whole lemon (you’ll use both the lemon juice and lemon zest)
-salt
How to make Strawberry Crisp Topping?
This buttery, crispy topping is so simple to make and takes just a few minutes. I like to place all of the ingredients in my food processor and pulse it until a fine crumb mixture is formed.
If you do not have a food processor, this topping can be made in a large mixing bowl. Combine all of the dry ingredients and then cut in the butter until a crumb mixture has formed.
For the topping you will need cold butter, flour, oats, brown sugar, cinnamon, and salt.
Once you have made the topping for this fruit crisp, evenly coat the prepared strawberries making sure to go all the way to the edges of the pan. Place in the oven at 375ºF and bake for 30 minutes, until golden and bubbly.

Ingredients
- 4 cups strawberries, diced
- 1/4 cup sugar
- 1/4 tsp cinnamon
- 3 tbsp all purpose flour
- 2 tsp lemon juice
- 2 tsp lemon zest
Topping ingredients
- 1/3 cup butter, cold
- 1/2 cup flour
- 1/2 cup oats
- 1/2 cup packed brown sugar
- 3/4 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 375ºF. Grease an 11x7 inch baking dish.
- In a small bowl combine the cinnamon and sugar.
- In a large mixing bowl combine strawberries, cinnamon sugar mixture and flour. Gently stir to coat.
- Add lemon juice and lemon zest to strawberries and transfer to greased 11x7 inch pan
How to make Strawberry Crisp Topping
- In a food processor combine the flour, oats, cinnamon, sugar, salt and butter. Pulse until the topping looks like coarse crumbs.
- Pour the topping over the top of the strawberries in the baking dish, making sure to coat evenly and go all the way to the edges.
- Bake for 30 minutes or until topping is golden brown and fruit is soft and bubbly. Serve hot or cold.

Made this with a few blueberries and raspberries because they were on hand. Used whole wheat flour & omitted salt. Love the hint of lemon! Super delicious.
