Ingredients in Blueberry Jello Salad
Jello – You will need 1 large box and 1 small box of raspberry Jello. You can use strawberry instead if you prefer, or you can make some combination of the two. Anything berry flavored works great!
Boiling water – You will need 3 cups of boiling water to add to the Jello. I usually boil water in the microwave, but the stovetop works great too!
Blueberry pie filling – A can of blueberry pie filling provides the blue color and the blueberry part of the jello. If you don’t like blueberry, you can use raspberry pie filling instead.
Crushed pineapple – An 8-ounce can of crushed pineapple adds a lot of sweetness and flavor. Make sure that the pineapple is well drained.
Cream cheese, softened – Any type of cream cheese works great (regular, low-fat, or non-fat). You can even use strawberry-flavored cream cheese for a slightly different twist!
Sour cream – You can swap out the sour cream with plain Greek yogurt or even vanilla Greek yogurt if you’d like.
Vanilla – Just a teaspoon of vanilla adds the perfect amount of flavor to the cream topping.
Cool Whip – A cup of Cool Whip whipped topping adds a light touch to the creamy layer.
Sugar – Just a half cup of sugar will sweeten up the cream topping.
Fresh berries – Raspberries, strawberries, blueberries, and blackberries all look beautiful on top!

- Make it ahead. The salad can be made up to 24 hours in advance and keeps well in the fridge.
- Drain the pineapple well. Excess liquid can prevent the gelatin from setting properly.
- Soften cream cheese ahead of time. This helps it blend smoothly into the topping without lumps.
- Use a cold bowl for whipped cream. If making stabilized whipped cream, a chilled metal bowl speeds up the process.

Storage Instructions
- Refrigerator: Store Blueberry Jello Salad covered tightly with plastic wrap or in an airtight container in the refrigerator. It will stay fresh for up to 3 days.
- Freezing is not recommended: Gelatin-based desserts do not freeze well, as the texture becomes watery and rubbery after thawing. For best results, enjoy within a few days of preparing.


BLUEBERRY JELLO SALAD RECIPE
Ingredients
- 1 large box and 1 small box raspberry Jello or strawberry or a mixture of the two!
- 3 cups boiling water
- 1 can blueberry pie filling (21 oz)
- 1 small can crushed pineapple (8 oz) drained
- 8 oz cream cheese softened
- ½ cup sour cream
- 1 tsp vanilla
- 1 cup Cool Whip
- ½ cup sugar
- fresh berries for topping if desired
Instructions
- In a large bowl, add the boiling water to the Jello. Mix until Jello is completely dissolved and then cool for 5-10 minutes.
- Stir in the blueberries and the pineapple and pour into a 9X13 pan. Place in the refrigerator until set, about 4 hours.
- To make the topping, beat the cream cheese, sour cream, vanilla and sugar with an electric mixer until smooth. Add the Cool Whip and fold in with a spoon until well combined.
- Spread the topping over the gelatin layer and refrigerate until ready to serve. Top with fresh berries if desired.

Can I use a different flavor of Jello?

What kind of cream cheese works best?
Regular, low-fat, or even non-fat will all work. Just be sure it’s fully softened so it blends smoothly with the other topping ingredients.
How do I soften cream cheese quickly?
Room temperature: Cut into cubes and let it sit out for 15–20 minutes.
Microwave: Unwrap and microwave in short 10–15 second bursts until soft (but not melted).
