It’s so easy to make that it requires very little hands-on time and it’s also a good way to make french toast for the whole family all at once. Perfect for a regular breakfast or even a special occasion!
WHAT IS BERRY FRENCH TOAST BAKE?
This french toast casserole recipe is a mixture of cubed French bread, mixed berries, eggs, and cream. Using frozen berries makes this baked french toast recipe so simple and easy to make. There are berries mixed in the french toast, and a homemade berry sauce to go on top as well. So much flavor, you won’t even need any butter or syrup to go with it!
Ingredients in Berry French Toast Bake
Flour: A little bit of all-purpose flour will help to thicken up the egg mixture and prevent the french toast casserole from getting soggy.
Half and half: Using half and half results in a creamy and rich flavor. You can use 1 1/2 cups milk instead but the taste and consistency will be a little bit different, especially if you use skim or 1% milk.
Sugar: You just need a little bit of sugar but it adds just the right amount of sweetness to the baked french toast recipe.
Vanilla: Just 1 teaspoon of vanilla extract is enough to make a difference in the flavors of this casserole. Use high-quality vanilla for an even better flavor.
Salt: The tiniest bit of salt brings out all the other flavors and makes them pop!
Eggs: We need 6 large eggs to bind this french toast bake together and give it that slight eggy flavor we expect.
French bread: You’ll need a whole loaf of French bread and you will need to cut it into 1-inch cubes.
Mixed berries: You need about 1 1/2 cups of frozen unsweetened mixed berries. You can use any types of berries that you want – I prefer the mixed ones!
Sauce:
Sugar: You’ve got to make sure the sauce is sweet so don’t leave the sugar out!
Corn starch: Corn starch will help to thicken up the sauce without changing the delicious berry flavor.
Orange juice: Adds the necessary liquid and splash of flavor to the sauce. You can swap this out with water if needed, but the orange juice really does add so much flavor.
Mixed berries: More frozen berries are needed to make this sauce incredible. Again, you can swap mixed berries with any type of berry you want!
Fresh strawberries: This delicious french toast bake is even better with fresh berries added to the sauce! Slice up the strawberries before adding them to the recipe. You can use raspberries, blackberries or blueberries, or any combination of berries that you prefer.
Step-by-step instructions to make Baked French Toast with berries
Grease bottom and sides of 9X13 baking dish with butter.
In a large mixing bowl, beat flour, half and half, sugar, vanilla, salt and eggs with a whisk. Stir in cubed bread and mixed berries. Spoon into dish. Cover tightly with plastic wrap and refrigerate for 1 hour.
Heat oven to 400°. Uncover bread and bake for 30 minutes or until lightly browned. A few minutes before the French toast is done baking, begin making the sauce.
Sauce: In saucepan over medium heat, stir sugar and cornstarch into orange juice. Stir in mixed berries. Heat until boiling, stirring constantly. After thickened, remove from heat and add fresh strawberries. (Feel free to add some fresh blueberries as well!) Spoon over warm French toast casserole and serve.

- 1 1/2 cups fresh strawberries sliced (can add other fresh berries if desired)
- 1 cup frozen mixed berries
