When you think of breakfast foods it doesn’t take long for your mind to wander to the idea of pancakes. There’s something about those fluffy golden brown cakes drizzled in warm maple syrup that just makes a truly satisfying breakfast!
Pancakes with Syrup
Making a stack of pancakes is easy and thanks to this basic recipe below. Packed with awesome tips for getting the BEST results every time you’re going to love learning how to make pancakes from scratch. Once you get more comfortable with this basic recipe feel free to make it more flavorful like adding in fresh blueberries, banana slices, or even chocolate chips! Yum!
Ingredients for Pancakes
-Eggs: 2 eggs will help give the pancakes structure and allow them to hold in bubbles and rise (making them fluffier). Not only that but egg yolks add a flavorful richness.
-Sugar: We want 3 tablespoons of granulated sugar to help sweeten our pancakes.
-Butter: Using 3 tbsp of melted butter in the batter we add fats and rich flavor. You will also need 3-4 tablespoons of butter for greasing the skillet.
-Milk: You will need 1 cup of milk to thin down the batter into the perfect consistency.
-Salt: To help enhance the flavors, you need 1 teaspoon of salt.
-Flour: The base of our pancake batter is 2 cups of all-purpose flour.
-Vanilla: 1 tablespoon of vanilla extract will add flavor and make our pancakes taste incredible. If desired, use stronger vanillas for an even stronger taste.
-Baking powder: You will need 2 tablespoons of baking powder to help our pancakes fluff up beautifully while cooking.
-Syrup: Add your favorite Vanilla Butter Pancake syrup over the top of your pancakes. You’ll need about 1/2 cup of syrup for all of the pancakes but you can use more or less depending on your own preferences.
How to make homemade pancakes
In a medium-sized bowl, whisk together the eggs and sugar until creamy.
Add in the milk and the melted butter and then whisk again to combine.
Stir in the vanilla extract.
In another bowl, stir together the flour, salt, and baking powder. Add this dry mixture to the wet ones and whisk until mostly smooth, although a few lumps are okay.
Let the batter rest for 5-10 minutes before beginning to cook the pancakes!
While the batter rests, preheat your skillet or griddle to medium heat (about 350 degrees F).
Brush your pan with butter and drop 2-3 tablespoons of pancake batter onto the pan. Let each dollop help the batter to spread to make a wider pancake.
Cook each pancake until the edges look dry and the surface is covered in bubbles, this is usually about 2 minutes.
Flip the pancake over and cook for another minute.
Remove the pancake from the pan and place it onto a plate.
Repeat the process until all of the batter has been used and pancakes are cooked. You can keep the pancakes on a pan in the oven until ready to serve to help them stay warm after cooking.

What Type of Vanilla Extract Should I Use?
A few years ago I tested 10 different vanilla extracts and found new favorites! I love using TOTONAC’s Mexican Vanilla for everyday use. It’s pure vanilla and contains no alcohol, which I like because I don’t like the taste of extracts made with alcohol. Each time I try another, I go back to Totonac’s quickly afterward; it’s so good! I also love using Nielsen Massey Vanilla Bean Paste. Again, this one has the best flavor by far!
Fluffy Homemade Pancakes
Ingredients
- 2 eggs
- 3 TBSP sugar
- 3 TBSP butter melted
- 1 cup milk
- 1 tsp salt
- 2 cup flour
- 1 TBSP vanilla
- 2 TBSP baking powder
- ½ cup maple syrup for topping
- 3-4 TBSP butter to grease the pan
Instructions
- Whisk the eggs and sugar in a medium sized mixing bowl until creamy. Add the milk and melted butter and whisk again. Add in vanilla extract.
- Combine the flour, salt, baking powder, then add to the wet ingredients. Whisk until mostly smooth; a few lumps are okay. Let batter sit at least 5 minutes; ideally 10 minutes, before cooking.
- Heat a frying pan or griddle to medium heat, about 350 degrees F.
- Brush pan with butter and drop about 2-3 TBSP pancake batter onto pan, giving each dollop of batter enough room to spread.
- Cook each pancake until edges look dry and surface is covered in bubbles, about 2 minutes. Flip and cook opposite side for about 1 minute. Remove from pan and store cooked pancakes on a pan in a warm oven until ready to serve.
- Repeat until all pancake batter has been cooked.
- Serve pancakes with butter and syrup for topping.

How to get fluffy pancakes
The most important thing to do to get a good rise out of the pancakes is to allow the batter to rest before using. This is when the science happens and the mixture becomes bubbly as ingredients become more active, like the baking powder. Another key thing is to make sure the skillet is properly heated before applying the batter and that you do not flatten the pancake down with the back of the spatula to cook the insides. If the outsides are getting done but the center is too raw, your heat is too high. Adjust, wait a minute, and try again.
Can pancakes be frozen?
Yes, you can freeze cooked pancakes! This is perfect for cooking your meals up and meal planning them or simply storing leftovers for a while longer. I recommend flash freezing your pancakes on a baking sheet for an hour or two before transferring to an airtight container or zipper topped bag as this will prevent sticking.
Can pancakes be reheated?
You can reheat your pancakes by placing them on a baking sheet in the oven at 350F for ten minutes. Make sure that the pan is covered in foil to prevent the pancakes from drying out. Otherwise, you can place a microwave-safe plate with a pancake or two on it in the microwave and cook for up to a minute or so until warmed through.
