You can never go wrong with homemade waffles, they’re such a crispy and fluffy breakfast food that’s as filling as they are delicious. With the earthy and tangy flavors of gingerbread in every bite, you’ll experience waffles like you’ve never had them before!
Gingerbread Waffles Recipe
I was inspired for this recipe after reading a similar one in a Woman’s Day Magazine and since then, it’s been a family favorite. I love serving it with butter syrup but maple syrup works great too.
I like using a Belgian Waffle iron when I make waffles- the squares are deeper and it seems to result in a lighter, fluffier waffle. When they’re too thin, the waffles get too crispy. My waffle iron makes waffle sticks and I actually love it!
Should waffle batter be thin or thick?
A good waffle mix is about the same consistency as pancake batter or thick syrup. You don’t want it to be so thin that it’s like water and you also don’t want it to be so thick that it can’t be whisked.
What do you serve with gingerbread waffles?
Gingerbread waffles are so flavorful finding things to serve with it can seem like a challenge, but if you consider your normal breakfast foods like eggs, sausage, and bacon, you shouldn’t have much issue. You can also take a dessert route and serve it with whipped cream or vanilla ice cream!
Gingerbread Waffles
-1 cup all purpose flour
-1 cup whole wheat flour
-3 tsp baking powder
-2 tsp ground ginger
-2 tsp cinnamon
-1/2 tsp nutmeg
-1/2 tsp salt
-3 eggs
-1/4 cup brown sugar
-1 3/4 cup buttermilk {or 1 3/4 cup milk + 1 TBSP lemon juice}
-1/2 cup {1 stick} butter, melted
-1/2 cup molasses
Butter Syrup Ingredients
-½ c. butter (1 cube)
-1 cup sugar
-1 cup buttermilk {or 1 c. milk & 1 TBSP lemon juice}
-1 TBSP vanilla
-1 TBSP corn syrup
-½ tsp. baking soda
How to Make Gingerbread Waffles
Preheat your waffle iron.
In a large bowl, whisk together the flours and spices.
In a separate bowl, beat the eggs, sugar, and molasses together. Add in the buttermilk and melted butter. Whisk to combine.
Add the dry mixture to the wet mixture, stirring until it’s just blended.
Pour about 1/2 cup of the waffle batter into a greased waffle iron. {This could be more or less, depending on the type of waffle iron you have!} Cook according to iron instructions.
Serve with warm Butter Syrup and fruit.
How to Make Butter Syrup
Simmer to almost boil. Whisk in baking soda and remove from heat.
Serve warm.

Can waffle batter be made the night before?
You can prepare this waffle mix the night before and keep it stored in a Ziploc bag or airtight container like a mason jar with lid. This makes morning routines so much quicker, and perfect for Christmas morning when things are already pretty hectic with gifts and family.
Should you let waffle batter rest?
The best pancakes come from a well rested batter, and the same can be said for waffles. Making the mixture and letting it rest for 5-10 minutes while the waffle griddle preheats. This will give you extra tender and fluffy waffles, which is something I think we can all enjoy!
