Raspberry Puff Pastry Donuts
These delicious donuts could not be easier to make! My kids love donuts but they are a bit time consuming to make from scratch. So I decided to try to use frozen Puff Pastry sheets as the base and I could not believe how well it worked. The glaze is made with fresh raspberries and powdered sugar, it is equally as delicious as the donut itself. I had these donuts ready when my kids came home from school and they were gone within minutes. We will definitely be making these again. And again!

RASPBERRY PUFF PASTRY DONUT INGREDIENTS
Puff pastry: You will need 1 box of the packaged Puff Pastry Sheets (2 sheets in the box) for the base of these incredibly donuts.
Egg: Using 1 egg, beaten, will help create structure to the pastry sheet and help the donuts form well.
Oil: For frying the donuts, you will need about 3-4 cups of oil.
Glaze
Raspberries: For the delicious glaze flavor, use ½ cup of fresh raspberries. You can use frozen if that’s what you have.
Powder sugar: To make the glaze nice and sweet, use 1 ½ cups of powdered sugar.
How to make Raspberry Pastry Donuts
Prep
Start by thawing the Puff Pastry sheets, you want them completely thawed before beginning the cooking process.
Once thawed, crack an egg into a small bowl and beat it lightly. Then, brush the top of one of the pastry sheets with the beaten egg, just enough to thinly coat the entire sheet. Next, place the other Puff Pastry sheet on top of the first one and use a rolling pin (or your fingers) to press them together.
After that, use a donut cutter to cut out as many donuts as you can. I have a 2″ mini donut cutter and was able to make 9 donuts. If you don’t have a donut cutter, you can use a round cookie cutter or small drinking glass, to cut the main donut shape, then a smaller round object to cut the center hole. A shot glass has worked for me in the past for this step.
Cook
Now, begin heating up the oil in a deep frying pan. The oil should be about 350-375 degrees before you start cooking the donuts.
Proceed to place each donut in the oil and let it fry on one side for about 1 minute, then flip and cook on the other side for 1 minute, until both sides are light golden brown. Place the cooked donuts on paper towels to cool.
Glaze
Wash and destem the raspberries, then transfer them to a food processor or blender. Add in the powder sugar and blend until smooth. If you want the glaze to be a bit thinner, add 1-2 tablespoons of milk and blend.
Proceed to dip the tops of each cooled donut into the glaze, let set for about 5 minutes.
Donuts are always better when they are fresh, so serve and eat as soon as possible. Enjoy!

HOW LONG ARE PUFF PASTRY DONUTS GOOD FOR?
Donuts are always best on the same day that they are made, especially when they are still a bit warm from the pan, yum! But, that said, these donuts can be kept stored in an airtight container for up to 2 days and still taste pretty great.
CAN I REHEAT RASPBERRY PASTRY DONUTS?
Yes, if you want to restore some of that fresh warm taste to soften a stale donut, you can place it on a plate and pop it into the microwave for about 5-8 seconds. This will help to restore some of that freshness to the donut.
Can I make the glaze a different fruit flavor?
You sure can! We love raspberries in our house and usually have a fresh stock of them on hand. But if you prefer another glaze flavor, feel free to give it a try. We think strawberries or blueberries would great for this glaze recipe too.

I have used the puff pastry from Trader Joes and it worked fine, but have also used puff pastry from my regular grocery store and it worked well too! I think any type of puff pastry should work!
