Easy Homemade Blackberry Scone recipe for buttery, soft & flavorful scones. Easily the best scone recipe ever! Good with blueberries & strawberries too!
I never really enjoyed scones until I made them myself. Homemade scones are so much better! This scone recipe is easy to make and results in soft, buttery scones. They’re not hard and dry like so many other scones I’ve tasted!
How to make the best scone recipe:
- Do NOT overmix! Just use a mixing bowl and a rubber scraper or spoon. Don’t use any type of en electric mixer as it’s incredibly easy to over mix the dough. Aim to mix the dough about 15 times and that’s it! I find it usually takes about 15 turns of the rubber scraper to get the ingredients incorporated.
- Grating the butter really makes your life so much easier. I promise! It’s super fast and works really, really well for scone recipes. Just use a basic cheese grater and make sure your butter is cold. I pull a cube of butter from the freezer for this step, but refrigerated butter works well too. Grated butter adds a wonderful texture and flavor to these scones.
- Remember that the dough will be STICKY. Sticky dough yields soft, delicate scones with amazing texture. Don’t add a lot of flour when you’re patting the dough out and cutting it into triangles. Yes it gets a bit messy. It’s okay, it will all be worth it! I like to spray my countertop with non-stick spray before I transfer the dough out on top of it, so that I use even less added flour.
- As with most baked goods, be sure to not over bake! That’s one quick way to have hard, dry scones, blech!
Blackberry Vanilla Scone Recipe Ingredients
Here’s what you’ll need to make this recipe for Blackberry Vanilla Scones:
–2 cups all-purpose flour
–1/3 cup + 2 TBSP sugar
–1 teaspoon baking powder
–1/4 teaspoon baking soda
–1/2 teaspoon salt
–1/2 cup butter, frozen or very cold
–1/2 cup sour cream or plain yogurt
–1 large egg
–1 TBSP good quality vanilla
–1 cup fresh blackberries, washed and patted dry
Can I use frozen berries?
Yes, you can use frozen berries to make scones. Just run the frozen berries under warm water to partially thaw them and proceed with the recipe.
Can I use a different berry to make scones?
Yes, you can use blueberries, strawberries (diced), raspberries, or even a combination of all of them! Just make sure you use 1 cup total of berries.
How to make Scones
- First you’ll want to preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- In a medium bowl, mix flour, sugar, baking powder, baking soda and salt. Grate butter into flour mixture using the large holes of a box grater (mixture should resemble coarse meal.) This step sounds difficult but it’s easy- your hands just get a bit buttery. It takes about a couple minutes to grate the entire cube of frozen butter.
- Add in the sour cream, vanilla and egg and stir until dough pulls from the side of the bowl and there are no crumbs on the bottom. Dough will be somewhat firm and sticky, but still manageable.
- Add in the fresh blackberries. Now some of the berries will burst and the dough will turn a bit purple- this is okay! Stir gently until most of the berries are incorporated. Flour a counter top and use your hands to shape the dough into a circle that’s about 1″ thick. If some of the berries escape just squish them back in- it’s a very technical process. 😉 Your hands will get purple and messy- just dig deep and let your inner child enjoy this part!
- Once you’ve got the dough in a decent circular shape, use a pizza cutter to cut the circle in half through the center, then again on the opposite side. Make 2 more cuts across the circle diagonally. You should have made 4 cuts and have 8 pieces.
- Use your hands or a spatula to transfer each scone to a greased cookie sheet. Sprinkle with the remaining 2 TBSP sugar, if desired. You can also use coarse sugar or turbinado sugar in this step.
- Bake until golden, about 15 to 17 minutes in a 400 degree F oven. Cool for 5 minutes. Top with vanilla glaze and enjoy warm!
Blackberry Vanilla Scone Recipe

- 1 TBSP vanilla extract
- 1 cup blackberries washed and patted dry
Easy Vanilla Glaze
- 1 cup powdered sugar
- 2 TBSP melted butter
- 1/2 tsp vanilla
- 1-2 TBSP milk
Instructions

Could I freeze them, either before or after cooking them ? I am trying this recipe and would double the recipe if I can freeze them.

I’d lean towards freezing the scones shaped, but not baked. Line them in a parchment/ wax lined pan, freeze until solid, then transfer to an airtight container. Thaw while the oven is preheating. 🙂

This is a great tasty blackberry scone! I added all the ingredients but it was dry and crumbly. I added milk to the recipe and it turned out great!

Tried making these followed the recipe, but my dough wouldn’t come together.
I ended up having to add about a T of milk, even after I cut it into wedges and much of it was still crumbly.
I froze the butter and shredded as suggested even used jumbo egg, just wasn’t enough moisture.
We’ll see how they turn out as they are baking right now.
I love scones, and blackberry scones sounded like just the thing with a fresh cup of coffee.

Its may be the way you are scooping your flour with the measuring cup. Try scooping with a spoon into the measuring cup.
