Copycat Chili’s Queso Dip is so easy to make in the slow cooker! This simple chip dip is made with Velveeta cheese, canned chili, a few simple spices, and a splash of lime.

Chili’s Queso Dip is one of the main reasons I love to go to Chili’s. It’s smooth, cheesy, and has just the right amount of heat. This simple recipe makes it easy to replicate this favorite recipe in your own kitchen. I love that you can just add all of the ingredients to a small crockpot and walk away for a few hours – it can’t get much easier than that! Keeping the dip in a crockpot makes transporting and keeping warm at parties and potlucks easy.

What is Queso?
Queso dip is a thick and melty cheese dip with Mexican roots. You can find many different types of queso at your local grocery store or follow along with this simple at-home recipe and make your own. This dips always go great with tortilla chips, sliced bell peppers, or pretzel bites. Using this as a dipping sauce for taquitos is also delicious and kicks up your taquito game a bit too.

Ingredients in Copycat Chili’s Queso Dip (Slow Cooker)
Velveeta – You will need sixteen ounces of processed cheese. Make sure to cube the cheese before adding to the other ingredients so that it will melt more quickly.
Chili – To achieve results that taste just like the dip at Chili’s, make sure to use a can of no-bean chili. If you want to use chili with beans, that’s fine, but the texture won’t be as smooth as the one at the restaurant. If you want a little more kick in your dip, use a spicy chili.
Milk – You can use any type of milk that you have on hand. Non-dairy alternatives work well too. The milk provides the liquid to the dip so you can add a little more or less to get the dip to the desired consistency.
Spices – The collection of spices is what gives the dip so much flavor! You will need a little bit of cayenne pepper, smoked paprika, salt, chili powder, and cumin.
Lime – Squeeze one lime and add the juice to the queso dip. If you don’t like lime, you can leave this out! A lime yields about two tablespoons of juice, so if you prefer to use canned lime juice, that’s fine too!
Garnish – Chopped scallions make a great garnish. If preferred, you can use chopped cilantro instead.

How to make Copycat Chili’s Queso Dip (Slow Cooker)
Cut the cheese into small cubes and add to the other ingredients in a small slow cooker. Cook for 2-3 hours on low, stirring occasionally until all of the cheese is melted. Turn the heat to “warm” until ready to serve, or transfer to a serving dish to serve immediately. Add any garnishes just before serving. This is definitely better while hot!

Ingredients
- 16 ounce processed cheese Velveeta
- 15 ounce can no-bean chili
- 1 cup milk
- ½ teaspoon cayenne pepper
- 1 ½ teaspoons smoked paprika
- ½ teaspoon salt
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1 lime (squeeze the juice into the dip)
- scallions optional for garnish
Instructions
- Cut the cheese into small cubes.
- Add the cubed cheese and all of the other ingredients to the slow cooker and stir gently.
- Cover and cook on low for 2-3 hours stirring occasionally to make sure everything is melting.
- Once the cheese is all melted and the queso is hot, it is ready to serve! You can leave the dip in the crockpot on warm if needed, or you can transfer it to a serving dish.
- Garnish with scallions (or cilantro) and more lime if you like!

How long is queso dip good for?
This dip can last up to about 3 days in the fridge if kept properly stored in an airtight or well-covered container. You can eat it cold from the fridge or reheat it for about a minute in the microwave (just stir well before serving).
What do I do if my cheese dip is too thick?
If your queso dip has turned out slightly too thick and you need to thin it out, start by adding ¼ cup of milk while heating it. Slowly add the milk and stir, add a small amount at a time so you do not thin it out too much.
