CHEESY CHICKEN ENCHILADA DIP

Cheesy Chicken Enchilada Dip is loaded with cheese, chicken, and a little bit of spice too! Add some chips and this is the perfect party food!

Cheesy Chicken Enchilada dip is my go-to recipe when it comes time to take an appetizer to a party. This dip is super easy to make and is so delicious, you may not even be hungry by the time the main course is served! You can make this in the microwave or in a pan on the stove, or you can even throw everything together in a mini slow cooker and heat it up for a few hours. I usually make it in a slow cooker when I take it to a party so that I can keep it plugged in and keep it warm the whole time. This is one of those dips that is much better warm!

CHEESY CHICKEN ENCHILADA DIP

  • 1 can (12.5 oz) chicken OR about 1-1 1/2 cups of cooked, shredded chicken
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 can (5 oz) evaporated milk
  • 1 cup shredded cheddar cheese
  • 1/3 cup finely chopped onion
  • 1 can (4 ounces) chopped green chiles
  • 1 packet taco seasoning
  1. STOVETOP METHOD: Combine all of the ingredients in a medium saucepan. Heat over medium heat, stirring occasionally until cheese is melted and everything is warmed through (about 6-8 minutes).
  2. MICROWAVE METHOD: In a 2 quart microwave-safe dish, combine all of the ingredients and microwave on high for about 4-5 minutes.  Stir and then microwave about 3-4 more minutes or until heated through.  And that’s it!  So easy!
  3. Serve warm with tortilla chips.

Ingredients
