CHEESY BLACK BEAN AVOCADO DIP
- 15 oz can black beans, rinsed and drained
- 3/4 cup salsa
- 2 cups shredded Monterey Jack cheese (I used a Mexican blend)
- 1 medium avocado, peeled and chopped
In a large mixing bowl, mash the beans with a fork. Stir salsa and 1 cup of the cheese into the beans. Spread bean mixture in the bottom of a 9-inch pie plate. Top with avocado and sprinkle with the remaining cheese. Bake for about 20 minutes at 350, until heated through and the cheese is melted. Serve warm with tortilla chips.
