CHEESY BLACK BEAN AVOCADO DIP

Ingredients

  • 15 oz can black beans rinsed and drained
  • ¾ cup salsa
  • 2 cups shredded Mexican blend or Monterey Jack cheese
  • 1 medium avocado peeled and chopped

Instructions

  • Prep: Preheat the oven to 350°. Peel and chop the avocado into small chunks, then set it aside.
  • Assemble: In a large mixing bowl, mash the black beans with a fork. Add the salsa and 1 cup of the shredded cheese and stir into the beans until well combined.
  • Spread the bean mixture in the bottom of a 9-inch pie plate.
  • Evenly distribute the avocado over the top of the bean mixture and sprinkle the remaining cheese on top.
  • Bake: Bake the dip for about 20 minutes, or until heated through and the cheese is melted. Serve warm with tortilla chips!

Notes

Leftover bean dish should be stored in an airtight container and it will last 3-5 days in the refrigerator. Reheat in the microwave before enjoying.
