Cheesy Chicken & Ranch Dip
The holidays are nearly upon us and I’m so excited to share this fantastic appetizer recipe with you all! This dip was inspired by another popular appetizer recipe we shared with you a while ago, Ranch Chicken Cheese Dip. I baked this version, so it is served warm with all the melted cheese and fresh bakes rolls. It’s perfect for events or casual get togethers. It’s a nice thick dip, which makes it less messy and easier to serve.
WHY YOU’LL LOVE THIS EASY CHICKEN RANCH DIP RECIPE
- Easy to make! To make this delectable dip you only need 7 ingredients! And some of these ingredients might already be in your fridge.
- Filling appetizer. What I love about this appetizer is that it is practically a meal. It is packed with two meats and loads of cheesy, it is a great dish to serve if you only want to make appetizers. It makes a great game day snack.
- 3 words: Cheesy Ranch Chicken. Do I really need to say more? I didn’t even mention the bacon, that is an added bonus! Once you give this amazing dip a try you will be hooked for sure.
Cheesy Ranch Chicken Dip Ingredients
Rolls: For this amazing dip recipe, you will need 14 pre-made frozen rolls, thawed*.
Chicken: You need 2 cups of cooked shredded chicken, for the base of this dip recipe.
Milk: Adding in ¼ cup of milk will give this dip a wonderful texture and taste.
Cream cheese: Use one 8-ounce block of cream cheese, to give this dip a nice creamy consistency.
Ranch dressing mix: For even more great taste, use one 1-ounce envelope of dry Ranch dressing mix.
Bacon: Add in 3 slices of cooked and diced bacon, see below for a simple recipe for making bacon.
Cheese: You will need 1 ¼ cup of each shredded Colby & Monterey Jack mixture and Mozzarella cheese. This is 2 ½ cups total of cheese to create the cheesiest amazing dip!
How to make Cheesy Chicken & Ranch Dip
Prep
Start by arranging the rolls around the edge of a greased warm 10″ skillet. If desired, place a bowl in the middle as a way to hold the rolls in place. Then cover and set in a warm place to rise for 30 minutes.
*To thaw rolls quickly, place on a plate sprayed with non-stick spray and microwave on defrost for 1 minute. If you’re not sure how to use your defrost option, you can microwave for 15 seconds, turn each roll over, then microwave another 15 seconds and proceed with the recipe.
Also, get the oven preheating to 350 degrees F.
Prepare chicken & bacon
You will need the chicken fully cooked to start assembling the dip, you can accomplish this many ways. If you want to make this recipe super easy, buy a premade rotisserie chicken and shred it. Or you can cook the chicken ahead of time in the crockpot, check out this shredded chicken recipe.

Assemble
In a large bowl, combine the chopped/shredded chicken and toss with a 1/4 cup of milk. Then add the cream cheese and Ranch dressing mix and stir well. After that, toss in the cooked bacon crumbles and 1 cup of each of the cheeses. Stir to combine, the mixture will be thick.
After the rolls have risen, transfer the chicken mixture to the center of the skillet and smooth into a round shape in the middle of the skillet, pressing mixture to the edges of the rolls. Then sprinkle the remaining 1/4 cup of each cheese on top.
Bake
Place the rolls and dip in the preheated oven and bake for 25 minutes, until the rolls are golden brown.
Serve the dip immediately and enjoy! I like to serve mine with cocktail forks nearby for guests to serve some of the cheesy chicken dip onto the hot rolls with.
CHEESY RANCH CHICKEN DIP

HOW LONG WILL THIS CHICKEN DIP LAST FOR?
This amazing dish will last in the refrigerator for 3-5 days, but I doubt there will ever be any left overs to save! It should be stored in an airtight container if there is any left to save.
WHAT TYPE OF CHICKEN IS BEST IN THIS APPETIZER RECIPE?
You can use any type of cooked, shredded chicken, but I usually use rotisserie chicken in this recipe because it is so moist, flavorful and easy too!
