I came up with this recipe for dip on a whim and it turned out so fantastic I had to share! It’s a cross between a green chile dip and a bean dip with a touch of heat. We served it as an appetizer with chips and it was a hit. I think it’d also be great in a chicken taco, topped with a bit of cilantro. YUM. I used chipotle chili powder for heat because I love the smoky flavor it adds. However you can instead use cayenne, hot sauce or even green salsa if you’d like.
Since it’s hot outside, I opted to microwave the dip then just broil it in the oven for a few minutes to melt the cheese. If you don’t mind heating up the house, I gave alternative instructions for baking it as well.
Cheesy Green Chile Bean Dip
- 1 15-oz can great northern beans
- 1 7-oz can chopped green chiles
- 4 ounces cream cheese
- 1/2 cup sour cream
- 1/2 cup grated mozzarella cheese
- 1/2 cup grated colby jack cheese
- 1/2 tsp cumin
- 1/4 tsp Chipotle Chili Powder
Drain the beans lightly and blend until mostly smooth. Pour into a medium sized microwaveable bowl. Add in green chiles, cream cheese, sour cream and spices. Microwave on high for 2 minutes. Stir until smooth and add in half of the grated cheeses. Stir to combine. Return to microwave for an additional minute. Transfer to an oven safe dish. Top with remaining grated cheeses and broil for 2-3 minutes, until cheese is melted and bubbly. Serve with chips.
Oven method: Combine all ingredients- except half of the grated cheeses- in an oven safe dish. Bake at 350 degrees F for 20 minutes. Top with remaining cheese and bake an additional 5 minutes. Broil for 1 minute if desired.
