Cheesy Baked Corn Dip is full of fresh corn, veggies and cheese for an easy corn dip recipe that is bursting with flavor. Perfect chip dip that everyone will love!
I love chips. Or maybe I just really like all of the different dips that go with the chips. I love Roasted Garlic Guacamole, Easy Blender Salsa, Cheesy Black Bean Avocado Dip, Cheesy Chicken Enchilada Dip….and now I’ve added this delicious hot corn dip recipe to my chip dipping rotation! It’s absolutely delicious!
Ingredients in Cheesy Baked Corn Dip
Butter – You’ll need 2 tablespoons of the butter. One to sauté the corn and one for the other veggies.
Corn – The main ingredient in this dip. You can use frozen corn or you can scrape off fresh corn from about 2 ears of corn.
Salt and pepper – A little seasoning and flavor. Feel free to add a little more to taste!
Veggies – The recipe calls for yellow onion, red bell pepper, green onions and jalapeno. Finely chop all the veggies before adding to the recipe.
Minced garlic – You can mince your own, or cheat like I do and use minced garlic from a jar. I always have a jar of minced garlic in my refrigerator and I use it in all the time!
Mayonnaise – You don’t need much, but it adds a lot of creaminess to the dip so don’t leave it out. You can use regular or light!
Cheese – The recipe calls for Monterey Jack and sharp Cheddar. These cheeses pair really well with the recipe, but you can definitely use other varieties of cheese if you prefer. And if you want to add a little bit more cheese…well, you can’t ever have too much cheese!
How to make Hot Corn Dip recipe
Melt 1 Tbsp butter in a saucepan over medium heat. Add the corn and season with salt and pepper. Sauté for about 5 minutes or until the corn starts to turn a light golden brown. Set aside.
In another saucepan, melt the remaining tablespoon of butter. Add the onion and pepper and sauté for about 2 minutes. Add the green onions, jalapeno, and garlic and sauté for about 2 more minutes. Remove from heat.
Put both mixtures together in a bowl and mix together with the Monterey Jack cheese. Pour into an 8X8 pan and top with the cheddar cheese.
Bake at 350° for about 15-20 minutes, until bubbling and golden brown on top. Serve immediately with chips.

WHAT DO YOU SERVE WITH CORN DIP?
Tortilla chips are absolutely amazing with this dip – this dip recipe is perfect as a chip dip! Just make sure to use a sturdy chip – Tostitos scoops are one of the best chips for being able to hold a lot of dip!
You can also use other types of crackers like Wheat Thins or Triscuits if you prefer. Or you can even eat this dip by itself with a spoon!
