EASY BEAN DIP
All of the ingredients in this bean dip recipe are common and easy to keep on hand. The cream cheese and sour cream make the dip smooth, and the salsa and taco seasoning add a ton of flavor. Add some cheese on top and bake everything together until it is hot and bubbly and ready to serve. The dip is perfect for serving with tortilla chips or sliced veggies.
Ingredients in Easy Bean Dip
Refried beans – You will need 1 15-ounce can of refried beans, or you can use 2 cups of homemade refried beans if you prefer!
Cream cheese – Any variety of cream cheese will work (non-fat, low-fat, or regular). Make sure the cream cheese is softened before adding to the other ingredients.
Sour cream – You can swap this out with plain Greek yogurt if you’d like to add more protein to the dip.
Green onions – Finely chop a bunch of green onions to add to the bean dip recipe.
Salsa – Just ¾ cup of your favorite salsa adds a lot of flavor to the dish. Any type of salsa works great! You can make the dip as mild or as spicy as you want, depending on the type of salsa you use.
Taco seasoning – One packet of taco seasoning provides multiple spices and seasonings to the dip.
Green chiles – A two-ounce can of green chiles is needed. You don’t need to drain the green chiles before adding to the dip.
Cheese – Dip is always better with melted cheese on top!

CAN YOU MAKE BEAN DIP IN THE MICROWAVE?
While the original recipe is baked in the oven, you can speed it up by using the microwave. Mix everything but the cheese together and then place in a microwave-safe dish. Microwave for about 2-3 minutes and then sprinkle the cheddar on top. You can microwave for another 30 seconds to melt the cheese, but I prefer to place the dish in the oven to broil the cheese. Totally up to you!
HOW DO YOU MAKE A SMOOTH CREAM CHEESE DIP?
The key to making the cream cheese dip smooth is to make sure that the cream cheese is completely softened. Room temperature is optimal, but if you are in a hurry, you can place cold cream cheese in the microwave. Microwave at 10-second intervals, checking in between to make sure that the cream cheese isn’t melting or getting too hot. Continue to stir the cream cheese in between each interval until you get a smooth, creamy texture.
CAN I USE LOW-FAT CREAM CHEESE IN THIS RECIPE?
Yes, you can use low-fat or even non-fat cream cheese in this recipe. There is enough flavor and texture added in with the beans, salsa, and shredded cheddar that you probably won’t even notice the difference!
WHAT IS THE BEST KIND OF CHEESE TO USE IN DIP?
I usually use cheddar jack, but you could use a different type of cheese or a combination of cheeses to change up the taste a little bit. You could do a mixture of cheddar and Swiss, or use a cheddar blend or Monterey Jack would be delicious too! This is a great way to use up any type of cheese you happen to have on hand!

Happy Monday! How long can I store leftovers, in an airtight container, in the fridge? Many thanks!
Nellie says
Yes, an airtight container in the fridge works great. The dip should be good for at least 3-4 days.
