We took a recipe we had on the site and changed it up a bit, the results speak for themselves. We are sure you are going to love these potatoes just as much as we have, and we can’t wait to hear about it!

Cheddar Twice Baked Potatoes Ingredients
Potatoes– You will need 4 medium-sized potatoes (Russet potatoes). This will give you 8 halves of potatoes which should be plenty for a few appetizers or a simple side dish.
Ranch– Use 1/3 cup of ranch dressing for delicious added flavor. This will also help to give a nice consistency too.
Garlic powder- By adding in 1 teaspoon of garlic powder, we can add even more flavor.
Sour cream- You will want 1/4 cup of sour cream to give your potatoes a rich texture and taste.
Cheddar cheese- You will need 2 cups of shredded cheddar cheese that has been divided between a few different steps.
How to Make Cheddar Ranch Twice Baked Potatoes
Prep
Preheat your oven to 375 degrees F.
Scrub and dry the skin of the potatoes. Make sure to pierce the skin of the potatoes at least 3 or 4 times before baking.
Bake
Bake your potatoes in the oven for about an hour at 375 degrees F. The internal temperature of the potatoes should reach 200 degrees F. Then, remove the potatoes from the oven and slice each one in half horizontally.
Keep the oven on, they do require baking again. After all, they are TWICE baked potatoes.
Make Filling
Next, scoop the centers out of the potato skins and place the meat of the potato into a medium-sized bowl. Be sure to leave a small edge of potato around the skins to it is sturdy enough to create the bowl you will be filling.
In the bowl with the potato chunks, add the ranch dressing, garlic powder, sour cream, and half of the cheddar cheese to your potatoes. Mash the potatoes and mix all the ingredients together until fully combined.
Assemble
Proceed to scoop the potato mixture and fill up the potato skins. Fill them all up, equally dividing the filling between the 8 halves. After that, sprinkle the tops with the remaining cheese.
Bake (again)
Place the potatoes back into the oven for another 5-6 minutes or until the cheese on top has melted completely.
Serve immediately and enjoy.

I like my potato skins to be a bit crispy, so I prefer to brush them with olive oil and sprinkle them with a little salt before baking. If you prefer the skins to stay soft, you can wrap them in aluminum foil instead. Either way you bake them, the results will be tasty!

Yes, you can use dry Ranch mix instead of traditional ranch dressing. You will need to add 1/3 cup of milk to the mixture with the dry mix, then proceed with the recipe.
Can Cheddar Ranch Twice Baked Potatoes be Made in Advance?
You can prepare these baked potatoes up to a day in advance and then simply assemble and bake the following day, if desired. This is great for planning before a party, meal planning, and just reducing the dinner prep for the next day.
What potato is best for twice baked?
We recommend only using russet baking potatoes for this recipe because it is the only one meant to hold up to everything we’re going to put it through. While you won’t need to peel the skin off of the potatoes, you will want to make sure that the skin has been well washed and scrubbed.
How long are twice baked potatoes good for?
These potatoes are best enjoyed straight out of the oven, but you can keep the leftovers on hand in an airtight container in the fridge for up to 4 days. To reheat, them simply place them back into the oven at 400 degrees F or microwave them until warmed.
You can freeze these potatoes in an airtight container for up to 3 months; just thaw overnight in the fridge or for a few hours on the counter before baking and eating.
