No need to wait for a special occasion though! Carrots make a great side dish for a lot of meals. A meal full of comfort foods is topped off perfectly with some Easy Chocolate Cherry Cake.
Ingredients in Orange Glazed Carrots
Carrots: You will need about 5 large carrots for the recipe. You can use a few more if you want a lighter glaze. Slice the carrots about 1/4″ thick.
Salt: A little bit of salt helps to bring out the other flavors in the carrots and in the glaze.
Sugar: Just a tablespoon of sugar adds the perfect amount of sweetness to the carrots.
Cornstarch: A teaspoon of cornstarch will thicken up the glaze to the perfect consistency.
Ginger: You only need a fourth of a teaspoon of ground ginger for the carrots.
Orange juice: The orange juice is the main ingredient in the glaze. So much flavor and sweetness to make this delicious glaze.
Butter: Butter makes everything better, right? Adds the savory taste to help balance out the sweetness of the glaze, and adds creaminess too!

WHAT ARE THE BEST KINDS OF CARROTS TO USE?
I prefer to use large, fresh carrots that I then cut into coin sized pieces. You will want to first peel the carrots and then slice them into a 1\2 inch button.
You can also use baby carrots (whole) or frozen sliced carrots that have been thawed. If you use baby carrots, you will likely need to increase the boiling time by a few minutes to make sure they are tender enough.
HOW LONG DO COOKED CARROTS STAY GOOD FOR?
You will want to store leftovers in the fridge in an airtight container for up to 5 days.
To reheat them you can warm slowly on the stove top or in the microwave. Add a pat of butter to your leftovers as they warm up. This will help to keep them from drying out and adds a little freshness to the dish.
