Iron Skillet Potatoes Ingredients
Potatoes: You will need to use 24 ounces of baby potatoes so that there are plenty to go around.
Salt: Use 1 teaspoon of seasoning salt to help enhance the flavors in the dish. You can use whatever your favorite seasoning salt is.
Onion powder: Adding in 1 teaspoon of onion powder is a great way to add more flavor.
Smoked paprika: Add a nice smoky flavor and some color by adding in ½ teaspoon of smoked paprika.
Pepper: Add ⅛ teaspoon of black pepper to help season the dish.
Olive oil: Adding in 1 teaspoon of olive oil will help to get the skillet ready for cooking.
Butter: Use ¼ cup (half of a stick) of butter to add more flavor and richness to the potatoes while keeping them from sticking to the pan.
How to make Cast Iron Skillet Potatoes
Prep
Start by preheating your 10 inch cast iron skillet in the oven at 400 degrees F for 5-10 minutes or on the stovetop over medium heat for the same amount of time.
While the skillet is heating up, rinse and cut your potatoes into 4 pieces each and place them into a gallon-sized ziplock bag.
Season potatoes
Next, in a small bowl combine the salt, pepper, onion powder and paprika. Stir to mix well.
Then, pour the seasoning mixture into the baggie with the potatoes and seal the bag shut.
Shake the bag well to combine and coat the potatoes.
Cook
Drizzle the olive oil in the cast iron skillet and wait one minute for it to sizzle and coat the bottom of the pan well.
Proceed to transfer the potatoes from the bag into the skillet.
Then, drop the 2 tablespoons of cubed butter on top of the potatoes. As the butter melts, stir it into the potatoes to mix together.
Let the potatoes cook for 15 minutes, stirring every 5 minutes or so. You want them to get crispy on all sides, so try not to stir more than that.
After that, add the remaining butter and stir again as it melts.
Continue to cook for another 15 minutes before removing from heat. You can use a fork to check the potatoes are cooked through, you want them nice and tender.
Let cool until safe to handle before serving.
Serve immediately and enjoy!
Alternate cooking methods using a cast iron skillet
You can cook these potatoes in a skillet on the stovetop at medium heat for 30 minutes, stirring midway through the cooking process. You can also cook them in the oven at 400 degrees F, stopping to stir them midway as directed. Cooking them in your smoker at 400 degrees F can also be done, just make sure to stir the potatoes at the halfway point.

How long are roasted potatoes good for?
You can keep your leftover potatoes in an airtight container in the fridge for up to 3 or 4 days. I recommend reheating them in the air fryer to get them to crisp back up but you could also reheat them in the oven or microwave if desired.
What kind of potatoes can I use?
I recommend sticking with baby potatoes, potatoes medley, red potatoes, or Yukon golden potatoes for this recipe as they will yield the best results. Russet potatoes won’t turn out as nicely but may also be used (baking time may need to be adjusted). Just make sure to cut the potatoes into 1 inch sized pieces or slightly smaller so that they are bite sized and can cook quickly and evenly.
How do you keep potatoes from sticking to cast iron?
The olive oil and butter used in this recipe should be sufficient at keeping your potatoes from sticking to the cast iron. Stirring the potatoes midway through baking also helps to keep them from sticking as well. If you find that your potatoes are still sticking then it may be because your cast iron isn’t well seasoned. You can add a little more olive oil as needed to help prevent additional sticking.
