How do I soften butter?
The traditional way of softening butter is leaving however much you need for a recipe out at room temperature for long enough to soften. However, there are some other, quicker ways to soften butter such as: cutting up the butter, pounding the butter, beating the butter and if it comes to it, microwaving the butter. If microwaving, use the defrost setting for only about 15 sec. You don’t want your butter to melt!
What fruits and vegetables are in season in Spring?
There are many produce items considered “in season” in Spring. Such as: apricots, artichokes, asparagus, avocados, carrots, chives, mangoes, peas, pineapples, rhubarb, spinach, etc. The recipes in this collection use a variety of these as well as some others! Enjoy.
Little Lemon Drop Glazed Mini Cupcakes are delicious bite-sized treats that start with a lemon cake mix! The easy lemon glaze soaks into the inverted mini cupcakes and is a simple, incredibly delicious lemon cake mix recipe! Little Lemon Drops are absolutely amazing and everyone will love you for making and sharing them! I took these to a barbecue and they were devoured in about 5 minutes….long before the meat even started cooking! Everyone was exclaiming about how amazing they were and I was thrilled because this recipe is so easy and it makes about 75 little cupcakes so it’s perfect for large gatherings. Little Lemon Drop Glazed Mini Cupcakes are delicious bite-sized treats that start with a lemon cake mix! The easy lemon glaze soaks into the inverted mini cupcakes and is a simple, incredibly delicious lemon cake mix recipe!
- 1 box lemon cake mix
- 1 box instant vanilla pudding 3.4 oz, dry mix
- 4 large eggs
- 1 1/4 cups sour cream or yogurt
- 1/2 cup milk
- 3 1/2 cups powdered sugar
- 2 tsp grated lemon zest from 1 lemon
- 2 TBSP unsalted butter melted
- 1/4 cup fresh lemon juice from 1 lemon
- 1/4 cup hot water
Preheat the oven to 325 F. Coat mini muffin tin with cooking spray.
- Beat the ingredients in a large bowl with an electric mixer for several minutes until blended and smooth. Fill each muffin hole about 1/2 full. I used a small cookie scoop and it worked perfectly! Bake for about 12 minutes or until a toothpick inserted in the center comes out clean.
- Cool the pan on a wire rack for about 2 minutes and then turn the muffin pan over on a wire rack so that all the muffins are upside down.
- Cool completely and once all the batter is cooked, you can make the glaze.
Place the wire racks over waxed paper. Beat the glaze ingredients in a medium bowl until smooth.
- Dip muffins in glaze to coat the bottoms (which are now the tops!) and the sides and let the excess drip off back into the bowl.
- Place each lemon drop back on the wire racks until the glaze is set.
Orange Creamsicle Fruit Dip is so light and refreshing and pairs wonderfully with just about any kind of fruit! In the summer, I eat lots of fruit. I think I could live on fruit alone if I could! I’m happy eating it plain, but a couple of my kids need a little something to dip their fruit in in order to be as excited about eating it as I am. I have several very simple fruit dip recipes that can be paired with just about any type of fruit. The orange flavor in the dip comes from frozen juice concentrate, so it can be easily switched with any other flavor. Raspberry Chocolate Chip Cookies are absolutely amazing! Adding fresh raspberries to a delicious classic cookie recipe makes such a delicious difference! Raspberry Chocolate Chip Cookies is a new invention of mine and I want to share it with all of you! I make a lot of treats at my house and there are quite a few that I love, but even with all of the fancy treats I have made, I still feel like chocolate chip cookies are my favorite. I found some incredible heirloom tomatoes at my local Farmer’s Market one day and to be honest, I planned this entire recipe around that tomato. It was perfectly ripe and juicy- yum! This salad is a variation on the traditional Caprese Salad- because I love vegetables and wanted to add more. So I did. And it was amazing! One of the best things about this salad is that it stores well. It might actually even be better the 2nd day, when the vegetables and fresh mozzarella have had a chance to absorb the deliciousness of the vinaigrette. Try it- you’ll love it. I love this fruit salad because in addition to it being gorgeous and delicious… it’s also incredibly easy! The sweet and tangy dressing you toss with the fruit lends a hand not only in flavor, but also in appearance as it helps the fruit to not brown. Mandarin Orange Cake with Pineapple Frosting is so light and refreshing and is the perfect cake for summer (or any other time too)! The recipe begins with a cake mix and then only requires 6 more ingredients for the cake and the frosting combined! Mandarin Orange Cake is so easy to make and the “frosting” is much lighter than traditional frosting which I love! I also love that this cake starts with a boxed cake mix and only requires a handful of simple ingredients – there are only three ingredients in the frosting! Lemon Raspberry Streusel Muffins with a lovely bright, raspberry flavor and topped with a sweet buttery streusel topping. Perfect morning treat! Lemon Raspberry Streusel Muffins are one of my absolute favorite muffin recipes at my house…and we love muffins! They are delicious, but also pretty healthy with a few substitutions. I like the lemon taste because it is very subtle, but if you aren’t a fan of lemon, it is very easy to use whatever flavor of yogurt you prefer. I have never been a very big fan of lemons, so lemon bars have never really been tempting to me. But then, I found this recipe for Orange Bars and knew I would be a fan! I love the orange flavor in both the bars and the glaze on top – it is so refreshing and yummy! I haven’t experimented around too much, but I think I may mix things up next time and try to add some melted chocolate to the glaze…I just LOVE the chocolate/orange combination so I’m sure that would be delicious too! Orange Cream Fruit Salad is a lovely fruit salad filled with oranges, pineapple and bananas with a sweet orange cream mixed in! Perfect to go alongside Easter dinner! Orange Cream Fruit Salad has been a family favorite recipe for years. I love fruit, and while fresh fruit is my favorite, this is a great recipe to make in the winter when good produce is hard to find (and expensive!), and it has also come in handy many times when I need to make a side dish and don’t have time to run to the store since many of the ingredients are ones that I keep on hand regularly. Lemon Buttermilk Pound Cake is a classic pound cake recipe with the addition of fresh lemon! Buttermilk gives this Lemon Pound Cake a wonderful texture and everyone loves the bright flavor of the lemon glaze. It’s the perfect buttermilk pound cake recipe! Raspberry Cream Cake begins with a white cake mix that is topped with sweet whipped cream, raspberries and danish dessert. Wonderful raspberry cake recipe with great flavors! Raspberry Cream Cake is a favorite of mine! Fresh raspberries are in abundance these days so I decided it was the perfect time for me to make one of my favorite desserts. Berries and Cream Salad is a wonderful recipe perfect for a picnic, Sunday dinner, or anytime you just want to add something special to your meal. The Greek yogurt, pudding mix and whipped topping come together and create a light and creamy base for showcasing the bright, sweet berries. In the recipe I use frozen berries but you’re welcome to use fresh. I used raspberries and blueberries, but I think it’d be wonderful with blackberries, cut up strawberries- or a mix of all of them! Blueberry Buttermilk Biscuits are soft and buttery and will melt in your mouth! One of my favorite biscuit recipes ever and perfect for any time of the day. Blueberry Buttermilk Biscuits is a homemade biscuit recipe that yields a soft, buttery biscuit with the lovely addition of fresh blueberries. I drizzled a vanilla glaze on top because, well, it tastes wonderful, but it’s certainly not a requirement. The biscuit dough may be a bit different than what you’re used to. This Texas Caviar version has an added ingredient that’s not normally found in other versions: avocado. Don’t leave it out. In my opinion it takes the dish from good to stellar. Other versions also use Black Eyed Peas, but I think they’re harder to find and cost more than regular beans. So I use regular cans of beans instead and you know what? It tastes the same!
