Spring is not far away and I love the bright, fresh foods associated with the season. Here are several of our favorite recipes that you will want on your list of things to bake/make this Spring…
Mini Lemon Drop Cupcakes
Mini Lemon Drop Cupcakes are delicious bite-sized treats that start with a lemon cake mix! The easy lemon glaze soaks into the bottoms to make these little cupcakes even more incredible. Little Lemon Drops are absolutely amazing and everyone will love you for making and sharing them! I took these to a barbecue and they were devoured in about 5 minutes….long before the meat even started cooking! Everyone was exclaiming about how amazing they were and I was thrilled because this recipe is so easy and it makes about 75 little cupcakes so it’s perfect for large gatherings. Although, my husband ate about a dozen himself before we even left the house so 75 of them doesn’t actually go as far as you’d think! Get the Mini Lemon Drop Cupcakes recipe here!
LEMON DROP GLAZED MINI CUPCAKES
Ingredients
Mini Lemon Drop Cupcakes
- 1 box lemon cake mix
- 1 box instant vanilla pudding 3.4 oz, dry mix
- 4 large eggs
- 1 1/4 cups sour cream or yogurt
- 1/2 cup milk
Easy Lemon Glaze
- 3 1/2 cups powdered sugar
- 2 tsp grated lemon zest from 1 lemon
- 2 TBSP unsalted butter melted
- 1/4 cup fresh lemon juice from 1 lemon
- 1/4 cup hot water
Instructions
To make the Mini Lemon Cupcakes:
- Preheat the oven to 325 F. Coat mini muffin tin with cooking spray.
- Beat the ingredients in a large bowl with an electric mixer for several minutes until blended and smooth. Fill each muffin hole about 1/2 full. I used a small cookie scoop and it worked perfectly! Bake for about 12 minutes or until a toothpick inserted in the center comes out clean.
- Cool the pan on a wire rack for about 2 minutes and then turn the muffin pan over on a wire rack so that all the muffins are upside down.
- Cool completely and once all the batter is cooked, you can make the glaze.
To make the Lemon Glaze:
- Place the wire racks over waxed paper. Beat the glaze ingredients in a medium bowl until smooth.
- Dip muffins in glaze to coat the bottoms (which are now the tops!) and the sides and let the excess drip off back into the bowl.
- Place each lemon drop back on the wire racks until the glaze is set.

Orange Cream Fruit Salad has been a family favorite recipe for years. I love fruit, and while fresh fruit is my favorite, this is a great recipe to make in the winter when good produce is hard to find (and expensive!), and it has also come in handy many times when I need to make a side dish and don’t have time to run to the store since many of the ingredients are ones that I keep on hand regularly. Raspberry Cream Cake is a favorite of mine! Fresh raspberries are in abundance these days so I decided it was the perfect time for me to make one of my favorite desserts. Lemon Cake Truffles

I have never been a very big fan of lemons, so lemon bars have never really been tempting to me. But then, I found this recipe for Orange Bars and knew I would be a fan! I love the orange flavor in both the bars and the glaze on top – it is so refreshing and yummy! I haven’t experimented around too much, but I think I may mix things up next time and try to add some melted chocolate to the glaze…I just LOVE the chocolate/orange combination so I’m sure that would be delicious too! This Garden Vegetable Caprese Salad is a variation on the traditional Caprese Salad- because I love vegetables and wanted to add more. So I did. And it was amazing! One of the best things about this salad is that it stores well. Texas Caviar
Texas Caviar combines delicious fresh vegetables with an amazing Italian dressing…plus you get the added crunch of tortilla chips in the mix! This Texas Caviar version has an added ingredient that’s not normally found in other versions: avocado. Don’t leave it out. In my opinion it takes the dish from good to stellar. Other versions also use Black Eyed Peas, but I think they’re harder to find and cost more than regular beans. So I use regular cans of beans instead and you know what? It tastes the same! How do I soften butter?
The traditional way of softening butter is leaving however much you need for a recipe out at room temperature for long enough to soften. However, there are some other, quicker ways to soften butter such as: cutting up the butter, pounding the butter, beating the butter and if it comes to it, microwaving the butter. If microwaving, use the defrost setting for only about 15 sec. You don’t want your butter to melt!
Should I use water, lemon juice or citric-acid for keeping fruit salads fresh?
There is actually no way to keep fruit salads fresh for days, but at least you can make fruit salad and eat it the the next day.
At times I also make fruit salad and store some for the next day. The biggest problem is that some fruits like apples and bananas oxidizes and turn black very quickly, while fruits like watermelon goes mushy when left to long. To counteract that, add a little lemon or lime juice to your fruit salad to stop fruits from oxidizing, and keep your fruit salad in the refrigerator to keep it from going mushy.
