Easy Fruit Pizza cookies begin with a delicious homemade sugar cookie recipe. Just 6 basic ingredients are mixed together then baked into amazing cookies. Then we top each cooled cookie with a sweetened cream. After that you get to exercise your creativity! Top each cookie with your favorite fruits. I love putting bits of chopped strawberries on mine, as well as blueberries, mandarin oranges and kiwi. You can use whatever fruits you’d like though!

How to make the best Sugar Cookies for Fruit Pizza
The ‘crust’ is made from a very simple but totally delicious sugar cookie recipe. The dough comes together quickly using 6 simple ingredients.
Butter, sugar, vanilla, an egg, flour, and baking powder are mixed together either with handheld beaters or a stand mixer.
Roll the dough out using your favorite rolling pin (I have a super heavy MARBLE rolling pin that is my favorite!). This dough will not rise or flatten while cooking, so be sure to roll the dough out to the thickness you want your end product to be! Use a medium circle cookie cutter to cut out the cookies.
Bake at 350° for 7 minutes or until puffy and no longer glossy in the center. Pull the cookies before they start turning golden brown. If they turn brown, you’ll have a crispy cookie instead of a chewy one.
How to make the best Whipped Cream Frosting
Let me first say, the whipped cream frosting is totally not required. If you have a favorite frosting, feel free to substitute it! Whipped Cream Frosting is, however, absolutely heavenly.
It’s literally my favorite vanilla buttercream folded into freshly whipped whipping cream. Totally eat-by-the-spoonful worthy.
The vanilla buttercream is made from butter, powdered sugar, milk and vanilla. Using beaters or a stand mixer, mix until combined and light and fluffy.
In a separate bowl, turn your clean beaters on high and whip the whipping cream until stiff peaks form. Then fold the two together until smooth and delicious!
What fruit do you put on a Fruit Pizza recipe?
Really, just about any fresh fruit will work well on Sugar Cookie Fruit Pizza! Just make sure the larger pieces of fruit are chopped small enough so that they are bite-sized and fit on your cookie! Here are some ideas:

Ingredients
Sugar Cookie ‘Crust’
- 1/2 cup butter softened
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 1 egg white
- 1 tsp baking powder
- 1 1/2 cups flour
Whipped Cream Frosting
- 1/4 cup butter
- 1 1/2 cup powdered sugar
- 1 tsp vanilla
- 1 tbsp milk
- 1/2 cup heavy whipping cream
Diced Fresh Fruit, as toppings (see ideas above!)
How to make Fruit Pizza Cookies
Cookie ‘Crust’
- Preheat oven to 350°.
- Cream together the butter and sugar in the bowl of a stand mixer for a full 3 minutes.
- Scrape sides and add in vanilla and egg. Mix until combined.
- Add flour and baking powder to the bowl. Mix slowly at first gradually getting faster until the dough comes together. The texture should be like Playdoh. Add a little flour or water if needed to get it to a soft, pliable consistency.
- Turn out onto a floured surface. Use a rolling pin and roll until about 1/4 inch thick. (The cookies will not rise while baking, they will not get thinner while baking. Roll out to your desired FINISHED thickness.)
- Use cookie cutters and cut out desired shapes. Transfer the cookies to a silicone lined cookie sheet.
- Bake at 350° for 6-8 minutes or until the centers are puffy and no longer glossy. Pull the cookies out of the oven BEFORE they start turning brown. If they turn brown, the cookie will be dry and ‘crackery’ instead of soft and chewy.
Whipped Cream Frosting
- Combine all ingredients in the bowl of a stand mixer using the whisk attachment. Whip until well combined.
- In a separate bowl, use beaters and whip the heavy whipping cream until stiff peaks form.
- Gently fold the buttercream and whipping cream together until combined and smooth.
Assembling the Fruit Pizzas
- Spread a generous amount of the Whipped Cream Frosting onto the sugar cookie base. Top with fruit of your choice.

How to store Fruit Pizza Cookies
Since these cookies are topped with sweet cream and fresh fruit, they do need to be refrigerated in an airtight container. They’re best when served the same day they’re made, but I have made them the night before and served them the next day and they were delicious.
