MINI STRAWBERRY SHORTCAKES
Mini Shortcakes are made with flour, baking powder, salt, sugar, butter, shortening, and half-and-half. Mix all of the ingredients and drop by spoonfuls onto a baking sheet. Brush some melted butter on top, add a dusting of sugar, and bake the shortcakes. Once the cakes are baked, serve them with fresh whipped cream and chopped berries.

Ingredients in Mini Strawberry Shortcakes
Flour – All-purpose flour works best, but a gluten-free substitute works well too.
Baking powder – Yes, you do need 4 teaspoons of baking powder for the recipe! I know that seems like a lot, but it’s not a typo! For best results, make sure your baking powder is not old or expired.
Salt – Don’t leave this out! Just a little bit of salt will help intensify the other flavors.
Sugar – Again, not a typo. You only need 1 tablespoon of sugar for the whole recipe. If you need your dessert to be a little sweeter, you can add more, but I promise there will be enough flavor and sweetness added with the strawberries and cream on top.
Butter – Make sure the butter is cold before cutting into smaller pieces and cutting into the dry ingredients.
Shortening – Add a little bit of shortening with the butter for the perfect texture in the shortcakes.
Half-and-half – This is what provides the liquid that will bind all of the other ingredients together. It makes the shortcakes rich and delicious!
Butter – You will need a little bit of melted butter to brush on top of the shortcakes before baking. I usually melt about 2 tablespoons.
Sugar – You will just need a little bit of sugar to sprinkle over the melted butter.
Berries – Strawberries go perfectly with this dessert, but any type of berry is delicious! Add some raspberries, blueberries, and blackberries…they are all delicious!
Sweetened Whipped Cream – You can’t serve shortcakes without whipped cream! We usually just use the kind in the can from the store, but it’s so easy to make your own! See below for directions.
How to make Mini Strawberry Shortcakes
Preheat oven to 450°. Grease a baking sheet or line with parchment paper.
In a large mixing bowl, combine flour, baking powder, salt and sugar. Cut in butter and shortening.
Mix in half-and-half and mix with a spoon just until combined.
Drop batter by large spoonfuls (I use a muffin scoop) onto the prepared baking sheet.
Brush melted butter on top and sprinkle with a little bit of sugar. Bake for 15 minutes or until light golden brown.
Cool and eat with berries and whipped cream.

How to make homemade whipped cream
Whipped cream in a can works great, but it’s easy to make your own too! In a large bowl, beat together 1 cup of heavy cream, 1/3 cup powdered sugar, and 1 teaspoon of vanilla. Keep beating until stiff peaks form and keep refrigerated until ready to serve.
HOW DO YOU WHIP CREAM?
Whipping cream is easy to do, especially if you know a little trick! Use a metal bowl and freeze it for at least 30 minutes before whipping the cream. This cuts so much time from the process! Before I learned this trick, it would take 8-10 minutes of beating the cream before it would get stiff, but now it only takes 3-4 minutes!
Place the whipping cream in the bowl immediately after removing the bowl from the freezer. Use an electric mixer turned up fairly high to beat the whipped cream. The whipped cream is ready when stiff peaks form as you lift the beaters up.
Make sure to use a fairly large bowl, even if you don’t have much cream – it does tend to splatter if your bowl isn’t big enough! You can whip the cream a few hours or even a couple of days in advance – just store it in an airtight container in the refrigerator until ready to use.
