Mini Strawberry Shortcakes

- 2 cups flour
- 4 tsp baking powder
- ¾ tsp salt
- 1 Tbsp. sugar
- 2 Tbsp. butter cold
- 2 Tbsp. shortening
- ¾ cup half-and-half
- melted butter to brush on top
- sugar to sprinkle on top
- berries (strawberries, raspberries, blueberries, etc.)
- whipped cream store-bought or homemade
Preheat oven to 450°. Grease a baking sheet or line with parchment paper.
In a large mixing bowl, combine flour, baking powder, salt and sugar. Cut in butter and shortening. Mix in half-and-half and mix with a spoon just until combined.
Drop batter by large spoonfuls (I use a muffin scoop) onto the prepared baking sheet. Brush melted butter on top and sprinkle with a little bit of sugar. Bake for 15 minutes or until light golden brown.
Cool and eat with berries and whipped cream.
