Mini Strawberry Shortcakes

Mini Strawberry Shortcakes are made from scratch with a few basic ingredients. Perfectly portioned dessert made with fresh strawberries and whipped cream.

Ingredients

  • 2 cups flour
  • 4 tsp baking powder
  • ¾ tsp salt
  • 1 Tbsp. sugar
  • 2 Tbsp. butter cold
  • 2 Tbsp. shortening
  • ¾ cup half-and-half
  • melted butter to brush on top
  • sugar to sprinkle on top
  • berries (strawberries, raspberries, blueberries, etc.)
  • whipped cream store-bought or homemade

Instructions

  • Preheat oven to 450°. Grease a baking sheet or line with parchment paper.
  • In a large mixing bowl, combine flour, baking powder, salt and sugar. Cut in butter and shortening. Mix in half-and-half and mix with a spoon just until combined.
  • Drop batter by large spoonfuls (I use a muffin scoop) onto the prepared baking sheet. Brush melted butter on top and sprinkle with a little bit of sugar. Bake for 15 minutes or until light golden brown.
  • Cool and eat with berries and whipped cream.
