Raspberry Cheesecake Milkshakes are made with frozen raspberries, cream cheese, ice cream and cream soda. This easy milkshake recipe is so simple to make and is absolutely delicious, especially on really hot summer days!
Raspberry Cheesecake Shakes have become one of my new favorite summertime treats! I recently moved from the Seattle area to southern Utah and it’s so hot. The average temperature in July is over 100° which is about thirty degrees higher than what we are used to in the summer! We’ve been trying all the cold treat recipes to try to survive the heat, and this one is perfect.
It only takes a few minutes to make these delicious milkshakes and the recipe makes enough for the whole family. You can easily cut the recipe in half if there are only 2-3 people.
Ingredients in Raspberry Cheesecake Shakes
You only need a few ingredients for these delicious shakes.
Frozen unsweetened raspberries – You will need a 12 ounce bag and the raspberries need to be thawed. You can do this by placing the bag of frozen berries in the refrigerator overnight, or you can thaw them more quickly by running room temperature water over the sealed bag for a few minutes. You can also use the defrost setting on a microwave for the fastest results.
Cream cheese – Any variety will do. You can use regular cream cheese, low-fat or non-fat. Just make sure the cream cheese is softened to room temperature before using.
Almond extract – If you don’t have any, you can leave it out since it’s such a small amount, but it really does add a nice little extra flavor to the shakes!
Vanilla ice cream – You’ll need a quart of your favorite ice cream. This is equal to about 4 cups or half of a half gallon container of ice cream.
Cream soda – You can replace this with Sprite or 7-Up, but I really like the cream soda best. You need two, 12 ounce cans.
Fresh raspberries and whipped cream for garnish – Definitely not necessary, but makes the shakes really pretty and is easy to do, especially if you use the whipped cream that comes in a can!
How to make Raspberry Cheesecake Shakes
In a blender, combine the frozen raspberries, cream cheese, almond extract, half the ice cream and 1/2 cup of the cream soda. Blend until smooth.
Divide the blended mixture amount 6 chilled tall glasses (16 oz). Add a scoop of the remaining ice cream to each drink. Top each drink with remaining cream soda. Serve immediately with whipped cream and fresh raspberries as a garnish (if desired).
Can I make other milkshake flavors?
This recipe is so easy to change up! You can use any type of frozen fruit, so you could easily make cherry cheesecake shakes or strawberry cheesecake milkshakes by just swapping out the fruit. A triple berry shake would be amazing too! Fresh fruit works well too, so you can easily make any flavor you’d like! If you don’t want the cheesecake flavor, just leave the cream cheese out!
Another way to change the flavors is to use different ice cream flavors. You could use raspberry ice cream, or you could intensify the cheesecake flavor by using a cheesecake flavored ice cream. You could even use chocolate ice cream for a chocolate raspberry cheesecake flavor that is absolutely incredible. Mix and match any fruits and ice cream flavors that you’d like!

HOW TO SOFTEN CREAM CHEESE
You can soften cream cheese by simply letting it sit on the countertop for 2-3 hours, until it comes to room temperature. Using room temperature cream cheese is vital. I don’t know if you are like me but I always forget to take the cream cheese out of the fridge! An easy way to soften the cream cheese is to use the defrost function on your microwave. Place the cream cheese, unwrapped, in a bowl, then select the lowest setting on defrost. Mine usually takes about 45 seconds. That’s it! Then proceed with the recipe.

OMG, this tastes awesome! I scaled the recipe back to. make 2 servings.. I didn’t have any raspberries, so I subbed frozen black cherries. It was amazingly delicious. Thanks for the recipe. I’m thinking you could substitute just about any fruit you like.
