Every year Valentine’s day brings out the Valentines day parties and gifts as everyone hands out sweets and cards. Serving up a bowl of this Strawberry Valentines Chex Mix to a classroom party is a surefire way to get your kid on the cool list for the week. All of the kids will talk about it as they chow down!
Tips For Making Valentines Chex Mix
I think that the strawberry flavored melting chocolates from craft stores like Joann are an amazing addition to this recipe because they taste great, make the recipe that much easier, and have a nice color. It melts easier too!
You can use whatever type of Chex mix cereal you want to use. I used Rice Chex because they’re plain flavored so the strawberry white chocolate flavors really shine through. You can use corn, chocolate, or any other flavor you want though!
What If I Can’t Find Strawberry Cream Pudding Mix?
If you can’t find Strawberry flavor, consider choosing a different variety. Coconut Cream, Banana Cream, Cheesecake, or another pudding mix flavor would taste amazing too!
What Can I Substitute For Strawberry Flavored White Chocolate Melting Discs?
If you can’t find the bags of Strawberry flavored white chocolate melting discs, you can take white chocolate chips and add a little bit of the dry pudding mix to create flavorful chocolate. There won’t be much color added, so if you want the mix to be pink, I recommend using food coloring to get it to the shade that you want.
Strawberry Valentine’s Day Chex Mix Ingredients
-4-6 cups Rice Chex cereal
-1 8-oz bag Strawberry Candy Melts OR
-1 bag of white chocolate baking chips {12 oz} AND
-1 box of Strawberry Creme Jell-O Pudding** {pudding, NOT gelatin!}
-Valentines M&M’s and/or Sprinkles
How To Make Valentines Day Chex Mix
Measure out the Chex cereal into a large bowl. Note: if you’re using the Strawberry Candy Melts, you’ll use 4 cups of cereal. If you’re using the white chocolate chips + pudding mix, you’ll use 6 cups of cereal.
Pour the chocolate into a small glass dish. Add in 1/2 tsp of shortening, if desired, to help the chocolate coat the cereal more easily.
Microwave for 1 minute 20 seconds. Let sit in the microwave for 3 minutes. Remove and gently stir. If once stirred the chocolate looks smooth, it’s done. If not, return to the microwave in 15 second increments, letting it sit for 2-3 minutes each time, until melted and smooth.
If you used White Chocolate Chips + Pudding Mix: Add in 4 TBSP of the strawberry cream pudding into the white chocolate and stir gently until smooth. Add in 2 drops of red food coloring, if desired.
Pour the chocolate mixture over the Chex cereal and then stir gently to coat.
Transfer the cereal mixture to a large piece of wax paper. Sprinkle with M&M’s and Valentine’s colored sprinkles, if desired.
Let cool to set. Break into pieces and then store in an airtight container to save. Candy can be made up to 3-4 days ahead if desired. It saves really well!

How Long Is Homemade Valentine’s Day Chex Mix Good For?
For the best tasting results, I don’t recommend making it more than 4 days in advance. Anything longer than that will could give you stale cereal. Also, remember to keep your Chex mix in an airtight container at room temperature.
Can You Freeze Chex Cereal?
If you make your Valentine’s Day mix and ave leftovers or simply want to make it last as long as possible, you can freeze it in an airtight container for up a few months.

I'm going to make this with cheesecake and/or oreo pudding tomorrow for valentine's day. I can't wait to try it. I always add a little butter when melting chocolate, it gives the chocolate a very creamy texture and makes it easier for coating things like strawberries or chex mix 🙂

MalibuKelly- if you used a whole box of cereal, you'd likely double the recipe (recipe calls for just 6 cups of cereal) Yeah, you'd have PLENTY for a classroom of kids.

I added the pudding and everything was completely ruined turned to the consistency of cookie dough! I have to make another trip to the store and I'm not happy about that… did they mean to say teaspoons instead of table???

@Chelsea- unfortunately, it sounds like your chocolate siezed. 🙁 I've done that many times. Did you see my note above? You have to melt the chocolate slowly, then stir gently when adding the pudding mix. As a safeguard, if you'd like to add 2 TBSP of shortening to your chocolate, then melt it together, it helps it to not seize. I'm sorry your treat didn't turn out. <br /><br />

Same as a few others. Used 12 oz of white chocolate chips – melted slowly with the shortening. It was a beautiful consistency then added the pudding mix slowly and it still ended up like dough. Thankfully I had a bar of white almond bark and more cereal so I started over. Did not add any pudding the 2nd time and it turned out great!
Maybe you used regular pudding mix and not instant pudding mix?

Did you use the whole package of pudding mix? The recipe only calls for 4 TBSP of the box. I did use instant- it was the only one Strawberry Creme flavored. Either way, the strawberry candy melts are the way to go! SO easy and you skip a step. Maybe try looking for those next time?
