Ingredients for Valentine’s Chocolate Bark
White chocolate chips: Melt into a smooth, creamy base that holds everything together and gives the bark its sweet, rich flavor.
Mini marshmallows: Add soft, fluffy texture and that classic, irresistible marshmallow bite in every piece.
Shortening (optional): Helps the white chocolate melt more smoothly and prevents it from seizing or overheating.
Valentine’s sprinkles and candies: Add crunch, color, and a festive finish that makes this bark perfect for celebrating.

How to melt Chocolate for Marshmallow Chocolate Bark
To easily melt white chocolate for this recipe, place the chips in a glass or ceramic bowl, which helps retain heat and encourages even melting. Microwave for 1 minute and 30 seconds, then let the chocolate sit in the microwave for 2 minutes without touching it. Gently stir, and if it isn’t fully melted, return it to the microwave for 15–20 seconds, letting it rest again before stirring.
Keep in mind that white chocolate often looks unmelted even when it’s actually ready—stir slowly and thoroughly for about 30 seconds before adding more heat to avoid overheating.
Why Does Chocolate Seize?
Melting white chocolate can be tricky because it seizes very easily. The most common causes are moisture and overheating—adding even a tiny bit of water can ruin melted chocolate, and overcooking often makes it look like the chocolate isn’t melted yet. This leads people to heat it longer, which only makes things worse and results in a thick, grainy mess.
Tips to Prevent Chocolate from Seizing:
- Melt the chocolate slowly, following the steps outlined above.
- Add a small amount of shortening to help the chocolate melt smoothly.
- If the chocolate starts to seize, melt ½ teaspoon of shortening in a separate bowl and gently stir it in; if needed, repeat with another ½ teaspoon until smooth.

Valentine’s Marshmallow Chocolate Bark
Ingredients
- 12 oz bag white chocolate chips
- 3 cups mini marshmallows
- ½ TBSP shortening optional
- Valentine’s sprinkles & candies
Instructions
- Line an 8×11 glass dish, or a half-sized cookie sheet, with parchment paper.
- Pour chocolate chips into a glass or ceramic bowl and microwave for 1 minute 30 seconds. Let sit 2 minutes. Gently stir and add another 15-20 seconds if chocolate isn’t fully melted.
- Add marshmallows to the chocolate mixture and stir to coat.
- Transfer chocolatey marshmallows to your prepared pan. Using a rubber scraper, make sure marshmallows extend to the edge of the pan. Press down slightly to make it all somewhat even. Shake on any sprinkles you’d like to decorate the bark with. Press candy into top of bark.
- Put in the fridge for about 20 minutes, until chocolate is set. Remove from the fridge and let sit on the counter to return to room temperature. Cut into pieces, serve, and enjoy!

What’s the Best Chocolate for Melting?
For candy recipes like this, dipping chocolate works best because it melts smoothly and sets nicely. Ghirardelli Melting Wafers are easy to find at most grocery stores, and buying melting chocolate in bulk online is also a great option. If you prefer to use white chocolate chips, add about ½ tablespoon of shortening or 2 teaspoons of coconut oil to help thin the chocolate and make it easier to work with.
How long is chocolate bark good for? Can it be frozen?
Valentine’s Marshmallow Chocolate Bark stays fresh for about 3–4 days at room temperature when stored in an airtight container. You can freeze it—wrap pieces tightly in plastic wrap or place them in an airtight container or freezer bag for up to 2 months. Let it thaw at room temperature before serving to keep the texture soft and the chocolate smooth.
Can I use milk or dark chocolate instead of white chocolate?
Yes! Milk or dark chocolate works well, but the bark will have a different flavor and color. Keep an eye on melting times, as darker chocolates melt slightly differently.
Can I add other toppings besides Valentine’s sprinkles?
Definitely! Crushed nuts, candy pieces, or even crushed cookies make fun variations. Customize it for any holiday or occasion.
