Homemade ice cream cake
This cake recipe is one you know is going to taste good and while sharing is optional, you know you’ll want to see everyone’s jaws drop in amazement when they see a homemade ice cream cake. Move over Baskin Robbins, Dairy Queen, and Carvel, there’s a new ice cream cake expert in town.
Ice Cream Cake Ingredients:
-Cookies: You will need about 22 Chewy Chocolate Chip Cookies from a package. You’re welcome to eat the remaining cookies in the package as you wait for your cake to chill and set.
-Chocolate chip cookie ice cream sandwiches: With 6 ice cream sandwiches we can get a nice layer that is uniform in size.
-Cookie dough ice cream: Use your favorite cookie dough ice cream to help add extra deliciousness to every bite.
-Whipped cream: Covering your cake in whipped cream will help to “frost” it and adds to the wonderful flavors we have going on. You will need 1 cup of whipped cream to decorate the cake with.
-Chocolate syrup: For a fun garnish and design you can add chocolate syrup to your ice cream cake just before serving.
How to Make Chocolate Chip Cookie Dough Ice Cream Cake
Let your cookie dough ice cream sit on the counter to soften as you prep the ice cream cake. You want the cake soft enough to scoop and spread but you don’t want it to be melted.
Line the bottom of a 9-inch springform pan with parchment paper. Letting it overhang from the pan by an inch or so will help to act as a sling to remove the cake when ready to serve.
Unwrap the ice cream sandwiches and lay them at the bottom of the pan, lining the edge.
Place 3-4 chocolate chip cookies in the middle of the sandwiches. If you plan to serve the cake soon, within a day or two, I recommend first dipping the cookies in milk. Depending on the height of your sandwiches, you may need a bit more or less to make the cookies even with the top of the sandwich layer.
Place your ice cream on top of the sandwiches and cookies. Spread into a nice and even layer, making sure to get in the cracks well.
Make a layer of cookies over the ice cream. This should take about 14 cookies to create an even layer.
Crumble your remaining cookies over the top and then adjust the crumbs to fill in any cracks that might reveal the ice cream layer below.
Cover the pan with plastic wrap and place it in the freezer for at least 2 hours to chill and set before serving.
Remove the cake from the pan and use a frosting bag and Wilton 2A tip to place dollops of whipped topping over the cake, or simply dollop it with a spoon.
Drizzle some chocolate syrup over the top and your cake is ready to slice and serve. Enjoy!
Chocolate Chip Cookie Dough Ice Cream Cake
Ingredients
- 22 Chewy Chocolate Chip Cookies
- 6 Chocolate Chip Cookie Ice Cream Sandwiches
- 1 ½ Quarts Cookie Dough Ice Cream
- 1 Cup Whipped Cream
- 3 TBSP Chocolate Syrup
Instructions
- Set out your cookie dough ice cream to soften so it’s easier to scoop when the time comes.
- Line the bottom of a 9-inch springform pan with parchment paper. I left an overhang, which made it easier to remove the cake once finished. Attach the top of the pan and lock in place.
- Unwrap and position the chocolate chip ice cream sandwiches in the bottom of the pan, lining the edge.
- Place 3-4 chocolate chip cookies in the middle of the sandwiches. Depending on the height of your chocolate chip cookie ice cream sandwiches, it may take more or less cookies for them to sit even with the sandwiches. If you plan to serve the cake soon, within a day or two, I recommend first dipping the cookies in milk. (especially if your cookies are a bit crunchy.)
- Place your ice cream on top of the sandwiches and cookies and spread even, making sure the cracks are filled with ice cream as well.
- Make an even layer over the ice cream with chocolate chip cookies. This should take about 14 cookies.
- Crumble the remaining cookies over the top, filling any cracks showing bare ice cream.
- Cover and place in the freezer for 2 hours or until solid.
- Remove and use a frosting bag with a Wilton 2A tip to place dollops on top of the cake.
- Drizzle with chocolate syrup and enjoy!

Can I use a different cookie?
You can use whatever type of cookies you’d like! I do recommend NOT using a cookie that’s been dipped in chocolate being as it’s more difficult for the cookie to soften. I think using peanut butter cookies sounds amazing!
What brand of chocolate chip cookie ice cream sandwiches do I use?
You can use any brand that you want. I personally used the Turkey Hill brand because I found that the cookie sandwiches were just a bit thicker than the other brands I was looking at. The height of the cookies doesn’t matter as you can easily add in more ice cream to the pan and make up the difference so just use the sandwiches you already know you love.
How to remove ice cream cake from a springform pan
Thanks to the parchment layer on the bottom of the pan that part of removal will be easy. To help get the sides unstuck, you’ll want to run a knife along the sides/walls of the pan to help unstick the cake from the metal. If needed, warming the knife up first with warm running water could help to unstick the frozen ice cream if it’s being difficult. You’ll want to wiggle the pan off, not lift directly as you could pull a side of the cake off and ruin the appearance of your hard work.
