As soon as spring comes around, I start preparing for summer. And by preparing for summer, I mean I start making lots of ice cream treats and other cold desserts! One of my favorite things to keep in the freezer has always been ice cream sandwiches made with chocolate chip cookies and vanilla ice cream. I make these all the time, but never even thought about branching out a little bit or getting more creative. I recently saw the Blue Bunny® Cherrific Cheesecake ice cream at Walmart and the wheels started turning -I started thinking about how good that ice cream would taste in between two graham cracker type cookies and knew I had to try it. The results are amazing and now I keep thinking about all of the different combinations of ice cream and cookies I need to try!
CHERRY CHEESECAKE ICE CREAM SANDWICHES
- 1/2 cup butter, softened
- 1 cup brown sugar
- 2 tsp vanilla
- 1 egg
- 1 1/2 cups graham cracker crumbs
- 3/4 cup flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- Blue Bunny® Cherrific Cheesecake ice cream
Using an electric mixer, cream together the butter and brown sugar. Add the vanilla and egg and beat until well combined. In a separate bowl, combine the graham cracker crumbs, flour baking soda and salt. Add this mixture to the butter mixture and stir until just combined. Using a cookie scoop, scoop dough onto a greased cookie sheet. Press each ball of dough down slightly to make the cookies a little bit more flat. Bake for 7 minutes at 350. Cool completely on a wire rack.
Set out the ice cream for about 5 minutes before scooping and placing between each pair of cookies. Slightly press the cookies together and use a knife to go around the ice cream sandwich and remove any excess ice cream. Wrap each sandwich individually in foil or plastic wrap and place in freezer until ready to eat. Enjoy!

I was amazed to see how many varieties of Blue Bunny® ice cream are at my local Walmart – there is definitely a flavor for everyone! I chose the Blue Bunny® Cherrific Cheesecake and the Blue Bunny® Mint Chocolate Chip but had a hard time not choosing several more (especially since all 4 kids were with me and each of them were finding their own favorite flavor they wanted to take home with us)!
I think the Blue Bunny® Mint Chocolate Chip would taste amazing between two chocolate brownie-type cookies – I can’t wait to try it!
