We love potatoes. They are definitely a staple at our house and I love how versatile they are. I have lots of favorite potato recipes, but this one is one that we always come back to. It’s kind of the classic cheesy potato casserole, but with the addition of ham…which makes it even better!
Cheesy Ham and Potato Casserole
Potato Casserole is made with diced potatoes, diced ham and onions. Once those ingredients are layered in a baking dish, a deliciously seasoned, creamy soup mixture is poured over the top. Add some shredded cheddar on top and bake until almost done. Stir in the cheese and add some more on top for the last few minutes of baking. Simple comfort food that can be served as a side dish or a main entree.
What to serve with potato casserole?
Because this potato casserole is made with ham, it can be served as a main dish on it’s own. You could add a side salad or serve it along with Sugared Asparagus or Orange Glazed Carrots and add some 30 Minute Dinner Rolls as well. If you’d like to serve the dish as a side, leave the ham out and serve with Slow Cooker Pork Roast or Ritz Cracker Meatloaf. Just don’t forget dessert! Everyone loves Chocolate Cherry Cake or Layered Oreo Pudding Dessert – either one will round out the ultimate comfort food meal!
Ingredients in Cheesy Ham and Potato Casserole
Potatoes: Don’t forget these! You will need 4 cups Russet or Yukon Gold potatoes, peeled and diced. This should be equivalent to about 4 medium sized potatoes.
Ham: You can dice up a ham or cheat like I do and buy it already diced! This recipe is a great way to use up leftover ham.
Onion: Yellow onion works best. I always buy the bags of chopped onions from the frozen section of the grocery store and keep a stash in my freezer so that I never have to chop onions!
Cream of chicken soup: Just one can of cream of chicken soup adds a lot of creaminess and flavor to the casserole.
Milk: Any type of milk works great, even non-dairy alternatives.
Sour cream: I often swap out the sour cream with plain Greek yogurt – both work great.
Flour: Just a little bit of flour will help to thicken up the sauce to the perfect consistency. You can swap this out with 1 tablespoon of cornstarch if preferred.
Butter: You only need a tablespoon of melted butter. Make sure it has cooled to room temperature before adding to the other ingredients.
Seasonings: You’ll need a little bit of garlic powder, onion powder, salt and black pepper to perfectly season the casserole.
Cheddar cheese: The recipe calls for 3 cups of shredded cheddar cheese. You can use any combination of cheeses that you have on hand.
How to make Cheesy Ham and Potato Casserole
Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
Layer the diced potatoes, diced ham, and chopped onions in the prepared baking dish.
In a mixing bowl, whisk together the soup, milk, sour cream, flour, melted butter, garlic powder, onion powder, salt, and black pepper until smooth.
Pour the soup mixture over the potatoes, ham, and onions, making sure to cover everything.
Sprinkle 1 cup of the shredded cheddar cheese on top of the casserole.
Cover the dish with foil and bake for 35-40 minutes.
Remove the foil and give it a mix. Add the remaining 2 cups of cheese. While uncovered, bake for an additional 5 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
Allow the casserole to cool for a few minutes before serving. The sauce will continue to thicken up during this time.
