WHAT ARE APPLE CINNAMON SCONES?
Apple cinnamon scones are a tasty homemade breakfast pastry with a simple cinnamon and sugar mixture on top. With cinnamon in the batter and lots of fresh apples too, these aren’t your ordinary scones recipe- they’re way better. Scones are perfect for breakfast but the also make a fantastic snack or even dessert.
WHAT KIND OF APPLES ARE BEST FOR BAKING?
You’ll need 1 large apple, peeled, cored, and chopped in small pieces. I really like using Fuji or Honeycrisp apples, but you can use Granny Smith apples or a different variety of tart apple if you prefer. Firm apples definitely work the best, so avoid softer apples (like Red Delicious) when choosing apples to bake with.
Ingredients in Apple Cinnamon Scones
Apple – You will need one tart apple, peeled and chopped in small pieces. I like to use Fuji or Honeycrisp apples, but other tart, crisp apples work well for baking as well.
Heavy cream – I think the heavy cream is the ingredient that really makes these scones so rich and delicious. You’ll just need 3/4 cup and you can probably swap this out with half and half or even whole milk, but the results are the best when you use heavy cream as called for.
Egg – Just one egg is needed to help bind the other ingredients together and provide the perfect scone consistency.
Vanilla – Just a little bit of vanilla adds the perfect amount of flavor to these delicious scones.
Flour – We need 1 3/4 cups of all-purpose flour to make the base for these scones. You can use all-purpose flour or bread flour.
Sugar – We don’t need much sugar in this dough, just 3 tablespoons will do, but it’s enough to make these go from savory to sweet.
Baking powder – The important leavening agent that works to get these scones fluffy and delicious.
Cinnamon – Nothing pairs better with apples than cinnamon, and although you’ll be putting more on top, you need some in the batter too! You can even add extra if you really like cinnamon…the recipe calls for 1/2 tsp, but you can easily add another 1/2 tsp without overpowering the recipe too much.
Salt – The salt works as a flavor enhancer and helps to bring out all the other flavors in these scones.
Butter – You’ll need 6 Tbsp of butter and it needs to be cold, so don’t soften it before adding to the recipe.
Cinnamon Sugar Topping
Sugar and cinnamon – You’ll be mixing the cinnamon and sugar together to sprinkle on top of the scones before baking. Don’t forget this step!
How to make Apple Cinnamon Scones
Preheat oven to 350°.
In a small bowl, whisk together the heavy cream with the egg and vanilla. Stir in the apple pieces.
In another bowl, whisk flour with 3 Tbsp of the sugar, baking powder, cinnamon and salt.
Cut butter into 4-5 smaller pieces. Add to the bowl with the flour mixture and use a pastry cutter (or the back of a fork) to mix it in with the other ingredients. Once the butter is fairly well mixed in (will still be in small chunks), add the apples and cream and stir everything together just until combined. Don’t overmix!
Sprinkle the counter with flour and roll the dough out into a 8 inch circle. Use a pizza cutter to cut into 8 wedges. Place them on a well greased or parchment lined cookie sheet. Mix together the cinnamon sugar topping and sprinkle on top of the scones.
Bake scones until golden brown, about 23-25 minutes. Let cool on baking sheets for a few minutes and then transfer them to a wire rack to cool completely. Or just eat them warm like I do!

CAN I FREEZE SCONES?
Yes, you can freeze scones in an airtight container for up to 1 month. Thaw on the countertop or on the defrost setting in the microwave. I prefer to serve scones warm, so heat just prior to serving.
DO I NEED TO REFRIGERATE THESE SCONES?
Because of the fresh fruit, it is recommended to store these in the refrigerator. They should keep 2-3 days if kept in an airtight container.
They can be reheated in the microwave and are excellent when warm!

at the top of the recipe it states this makes 8 scones but in directions you say to cut in to 12 pieces?

Oops! It’s 8 pieces. 12 pieces would make for some very small scones 🙂
