This easy Christmas dessert recipe is a rich chocolate brownie with a cherry inside and white chocolate coating on the outside. These little brownies bites are made and decorated to look like a snowman head, fully complete with accessories like gumdrop earmuffs!

Snowman Brownie Truffle Ingredients
Brownies: You will need a 9×13 pan’s worth of cooked and prepared brownies. You can use homemade brownies, boxed mix or store-bought brownies.
Cherries: Use 18 stemless maraschino cherries for the centers of these little snowman heads, but you can easily omit the cherries if you don’t want them.
Almond bark: For the chocolate coating, you will need 1 pound of white almond bark to melt down. Don’t be tempted to use white chocolate chips for dipping, they do not melt as smoothly.
Icing: To add the face and nose, you will want to use black and orange colored cookie icing; this is typically found near the sprinkles and bagged icings in the grocery store’s baking aisle.
Gumdrops: You need about 36 gumdrops for the most perfect pair of earmuffs, this will make 18 total. Choose any color or mix and match.
How to make Snowman Brownie Bites
Prep
Begin by baking the brownies in a 9×13 baking dish, according to the package directions. Allow them to cool completely before proceeding with the rest of the recipe.
When ready to proceed, place a piece of parchment paper over a baking sheet and set it aside.
Assemble the centers
Next, trim off the edges of the cooked brownies; we won’t be using the hard crusts. Feel free to snack on these crunchy brownie parts while you make these festive treats.
Then, slice the remaining brownies into 18 squares.
After that, place one brownie square into the palm of your hand, then place a maraschino cherry in the middle and mold the brownie around the cherry. Roll the brownie and cherry into a ball.
Place the brownie ball onto the parchment paper lined baking sheet, and continue to repeat until all 18 brownie pieces have been rolled.
Chill the brownies in the fridge for 15-20 minutes to help them harden and set.
Melt chocolate
In a medium size bowl, microwave the almond bark in 30 second intervals, until smooth and melted.
Then, use 2 forks to dip and roll the chilled brownie balls into the melted almond bark, and then place them back onto the parchment paper lined baking sheet. Continue until all brownies have been coated in chocolate.
Decorate
Next, cut your gumdrops in half so that they look like ear muffs when placed on either side of the snowman head. Place all of the halved gumdrops onto the snowmen.
Now, use the cookie icing to pipe a headband between the two earmuffs, and add some eyes, a mouth, and a carrot nose.
Serve and enjoy!

How long are snowman brownie bites good for?
These brownie bites can be kept stored in an airtight container for up to 3-5 days at room temperature. If you store them in the fridge, they can last for up to 1 week.
Can I make brownie bites without making them snowmen?
Yes, you absolutely can! For a year-long version or a more “mature” look, you can simply make them as directed but instead of dipping them in white chocolate, dip them in milk chocolate or dark chocolate and then drizzle some more chocolate over the top for a nice truffle look.
CAN I MAKE THESE BROWNIE BITES GLUTEN FREE?
It can easily be gluten free! If you are using a boxed brownie mix, there are GF options these days that are delicious. There are many GF flour options if you are making brownies from scratch. I believe that using a good brand such as Bob’s Red Mill will give the best results. Almond bark is typically gluten free, as are the gum drop ear muffs. This recipe can easily be made GF, perfect for everyone to enjoy!
